Chipotle Chicken Cheesesteaks

Ingredients
- 1 (7 ounce) can chipotle chiles in adobo
- 2 teaspoons olive oil, divided
- 1 lb chicken cutlet, thinly sliced into strips
- 1 cup sliced onion
- 1 cup red bell pepper, strips
- 2 garlic cloves, minced
- 1/4 teaspoon dried thyme
- 1 cup shredded reduced-fat sharp cheddar cheese
- 4 hoagie rolls or 4 soft taco-size flour tortillas
Recipe
- 1 heat 1 teaspoon of olive oil in a large skillet over medium-high heat.
- 2 add chicken saute 5 minutes or till done. then remove chicken from pan.
- 3 heat remaining 1 teaspoon of olive oil and add onion, peppers, garlic and thyme and saute' about 4 minutes.
- 4 slice a chipotle pepper into small strips and add that and the all the adobo sauce to the pan and mix well and cook for 1 minute.
- 5 add chicken back to the pan and cook for 1 minute stirring frequently.
- 6 remove from heat add cheese, stirring until it melts.
- 7 place in your favorite roll or taco shell and enjoy!
- 8 you can add as many chipotle peppers depending on how hot you want to go!
