Chipotle Chicken Cheesesteaks

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 (7 ounce) can chipotle chiles in adobo
  • 2 teaspoons olive oil, divided
  • 1 lb chicken cutlet, thinly sliced into strips
  • 1 cup sliced onion
  • 1 cup red bell pepper, strips
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried thyme
  • 1 cup shredded reduced-fat sharp cheddar cheese
  • 4 hoagie rolls or 4 soft taco-size flour tortillas

Recipe

  • 1 heat 1 teaspoon of olive oil in a large skillet over medium-high heat.
  • 2 add chicken saute 5 minutes or till done. then remove chicken from pan.
  • 3 heat remaining 1 teaspoon of olive oil and add onion, peppers, garlic and thyme and saute' about 4 minutes.
  • 4 slice a chipotle pepper into small strips and add that and the all the adobo sauce to the pan and mix well and cook for 1 minute.
  • 5 add chicken back to the pan and cook for 1 minute stirring frequently.
  • 6 remove from heat add cheese, stirring until it melts.
  • 7 place in your favorite roll or taco shell and enjoy!
  • 8 you can add as many chipotle peppers depending on how hot you want to go!
