Berry Cream Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 4 cups flour
  • 3 cups blueberries (i use frozen)
  • 2 cups sugar
  • 4 eggs, beaten
  • 2 teaspoons baking powder
  • 2 cups sour cream
  • 1 teaspoon baking soda
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon vanilla

Recipe

  • 1 spray muffin pan with pam.
  • 2 mix flour, sugar, baking powder, baking soda and salt.
  • 3 add berries and toss.
  • 4 combine eggs, sourcream, oil and vanilla. stir in dry ingredients.
  • 5 fill each muffin 2/3 full and bake at 400 degrees for 20-25 minutes.
