Blueberry Bran Muffins

Total Time: 25 mins Preparation Time: 12 mins Cook Time: 13 mins

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/4 cups all-bran cereal
  • 1/2 cup 2% low-fat milk
  • 1/2 cup orange juice
  • 1 egg
  • 3 tablespoons vegetable oil
  • 1/2 cup firmly packed brown sugar
  • 1 cup fresh or frozen (unthawed) berries

Recipe

  • 1 preheat oven 400 f.
  • 2 stir flours, baking powder, soda, and salt together, set aside.
  • 3 in a large bowl, stir together cereal, milk and juice. let stand 3 minute or until cereal softens. add egg, oil and sugar. beat well.
  • 4 add flour mixture, stirring just until combined. fold in berries. spoon batter evenly into lightly greased or paper-lined muffin tin.
  • 5 bake at 400 f 12-14 min or until golden brown and tops of muffins spring back when lightly touched.

Courgette Christmas Candles

Ingredients

  • Servings: 12
  • 200 g courgettes, straight if possible
  • 45 g cream cheese
  • 2 artichoke hearts in brine, drained & chopped
  • 2 sun-dried tomatoes, drained of oil and chopped
  • 1 teaspoon lemon juice
  • 2 teaspoons chives, finely chopped

Recipe

  • 1 peel 12 or 14 vertical strips of courgette using a potato peeler (preferably a swivel type one).
  • 2 bring a large pan of water to the boil, blanch the courgette for 30 seconds and then refresh under cold water.
  • 3 put the cream cheese, artichokes, tomatoes and lemon juice into a food processor and blend until smooth, then add the chives.
  • 4 lay the courgette strips flat and spread a tsp of the pate on top. then roll up gently and stand upright. garnish with extra chives and thin strips of sun dried tomatoes.

  • 4 cube steaks (about 4 ounce each)
  • 1/2 cup all-purpose flour
  • 1/8 teaspoon ground black pepper
  • 3/4 cup buttermilk
  • 1 cup finely crushed saltine crackers, about 25 crackers
  • 3 tablespoons vegetable shortening (like crisco)
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 cup milk

Recipe

  • 1 if necessary, pound cubed steaks to 1/4-inch thickness between 2 sheets of plastic wrap, using a meat pounder or rolling pin.

  • 3 combine flour and pepper in a shallow dish.
  • 4 pour buttermilk into a second dish.

  • 1/2 cup chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried coriander
  • 1 teaspoon cayenne pepper
  • 2 teaspoons dry mustard

  • 4 chuck eye steak (1/2 - 3/4 inch thick)

  • 1 prepare the rub by combining all ingredients.

  • 1/2 cup butter
  • 1 cup celery, chopped

  • 12 cups dry day-old bread, cubed (about 2 pounds of bread)

Chinese Style Mustard Sauce

Ingredients

  • 1/2 cup sugar
  • 1/4 cup colman's mustard powder
  • 2 egg yolks
  • 1/2 cup red wine vinegar
  • 3/4 cup creme fraiche or 3/4 cup sour cream

Recipe

  • 1 put the sugar and mustard in the top of a double boiler and mix with a whisk.
  • 2 when well combined, whisk in the egg yolks and vinegar.
  • 3 cook over simmering water, stirring occasionally, for 10 to 15 minutes, until it is thick enough to form ribbons when drizzled from the spoon.
  • 4 remove from the heat and allow the mixture to cool.
  • 5 when cool, fold in the creme fraiche.
  • 6 keep refrigerated until needed.

  • 1 3/4 cups all-purpose flour

  • 2 large eggs
  • 2 1/2 tablespoons honey

Recipe

  • 1 preheat your waffle iron.
  • 2 preheat the oven to 200 degrees if you won't be eating immediately.
  • 3 melt butter, reserve.
  • 4 whisk dry ingredients.
  • 5 in a seperate bowl, beat cottage cheese, milk, eggs, honey. don't try to beat out the curds of cheese. gradually add dry ingredients to the cottage cheese mixture, stirring only until the dry ingredients are incorporated. stir in butter.
  • 6 spray grids and spoon out 1/2 cup batter onto the hot iron. use a wooden spoon to smooth the batter almost to the edge of the grids. close the lid and bake until browned.
  • 7 serve immediately, or keep in a slingle layer, on a rack in the preheated oven.

  • 3 garlic cloves
  • 1/2 large onion
  • 1/2 bunch cilantro
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 (15 ounce) cans of roasted chopped tomatoes
  • 2 (8 ounce) cans tomato sauce
  • 1 (8 ounce) can water
  • 15 -20 dried red chile japones japanese chili peppers

  • 1 roast the 15 to 20 chili peppers in a slightly oiled pan.
  • 2 chop the onion and cilantro.
  • 3 sautee the chopped onion in oil.
  • 4 add all of the ingredients into a blender and puree.

California Style Enchiladas

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 lbs ground beef
  • 8 medium size flour tortillas
  • 2 cups mexican cheese (if 4 blend is not available, mild cheddar will work)
  • 1 (2 ounce) can old el paso green chilies (or other brand)
  • 1 bunch green onion
  • 1/2 onion
  • 1 garlic clove (minced)
  • 1 teaspoon oregano
  • 1 (8 ounce) can of hunt's chopped tomatoes, sour cream and shredded lettuce (optional for topping)
  • 3 (8 ounce) cans enchilada sauce (old el paso recommended)

Recipe

  • 1 combine beef, onions, oregano, garlic, the thick part of the green onion and green chili's into frying pan and cook until beef is browned; drain but do not rinse. preheat oven to 350 degrees.
  • 2 place a thin layer of enchilada sauce into about a 9x13 baking dish, just enough to fill the bottom.
  • 3 place 1/4 to 1/2 cup of beef mixture into tortilla. roll as you would a burrito and place into baking dish. repeat 8 times until baking dish is full.
  • 4 pour remaining enchilada sauce into baking dish, ensuring no tortilla is visible upon doing so. dish will be near 2/3 full of sauce, this is okay.
  • 5 top wraps with any remaining beef mixture, spread evenly.
  • 6 spread cheese over baking dish, ensure each wrap has been topped with cheese. its not uncommon to create an entire layer of cheese over top of the wraps.
  • 7 spread remaining green onions over cheese layer.
  • 8 bake in oven for about 20 minutes, until sauce is warmed and cheese is melted.
  • 9 scoop each out onto a plate with a spatula or large spoon, top with sauce from pan if desired.
  • 10 top with tomatoes, lettuce and sour cream if desired. best served with refried beans and zateran's spanish rice.

Chocolate Rolled Fondant

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 2 lbs sifted confectioners' sugar (powdered)
  • 1/4 cup cold water
  • 1 tablespoon unflavored gelatin
  • 1/4 cup liquid glucose or 1/4 cup corn syrup
  • 1 1/2 tablespoons glycerine
  • 2 tablespoons vegetable shortening (optional)
  • 4 ounces unsweetened chocolate, melted or
  • 1/2 cup cocoa
  • 1 teaspoon flavoring such clear vanilla extract or 1 teaspoon almond extract, paste or 1 teaspoon liquid, coloring if desired

Recipe

  • 1 place sifted confectioners’ sugar into a large bowl and make a well in the center.
  • 2 pour the water into small saucepan and sprinkle the gelatin on top to soften for about 5 minutes.
  • 3 gently heat the gelatin and stir until it is dissolved and clear. do not boil.
  • 4 remove from the heat and add the glucose or syrup, glycerine and shortening, stirring until well blended.
  • 5 pour the mixture into the well of sugar and mix until most of the sugar is blended.
  • 6 knead with your hands until all of the sugar is combined and the mixture becomes stiff.
  • 7 knead in melted chocolate. if the mixture is very sticky, add small amounts of confectioners’ sugar.
  • 8 shape the mixture into a ball, wrap it tightly in plastic wrap, and let it rest at room temperature overnight in an airtight container.
  • 9 to make a chocolate brown colored fondant without the chocolate taste, knead in brown icing color with a small amount of red icing color to fondant.

Brussels Sprouts In Lemon Cream

  • 3/4 cup heavy cream
  • 3/4 teaspoon salt

  • 1 cook the brussels sprouts in boiling water until just tender, about 5 minutes. drain and set aside.
  • 2 combine the heavy cream, salt and pepper in a large skillet over medium heat. bring to a simmer and cook until cream has reduced to 1/2 cup, about 3-4 minutes. add sprouts and lemon zest and heat through, about 2 minutes. taste and add salt or pepper as nedded.

  • 1 line a baking sheet with plastic wrap. place 1 wonton wrapper on the work surface. brush the edges of the wrapper lightly with egg. spoon 1 tablespoon of chocolate-hazelnut spread into the center of the wrapper. fold the wrapper diagonally in half over the filling and press the edges of the wrapper to seal. place the ravioli on the prepared baking sheet. repeat with the remaining wonton wrappers, egg, and chocolate-hazelnut spread.
  • 2 preheat the oven to 200 degrees f. add enough oil to a heavy large frying pan to reach a depth of 2 inches. heat the oil over medium heat to 350 degrees f.

  • 2 cups vinaigrette marinade
  • 8 slices brown bread

Recipe

  • 1 cook and cube 2 chicken breasts in bite-sized pieces.
  • 2 cool in fridge for about 10 minutes.
  • 3 clean asparagus and place in pot on stovetop.
  • 4 cover with marinade.
  • 5 boil for 5-10 minutes until soft and tender.
  • 6 place in fridge to cool.
  • 7 remove chicken from fridge and combine with mayo, dried onions, seasoning salt and almonds.
