  • 4 ounces granulated sugar
  • 4 ounces golden syrup
  • 4 ounces all-purpose flour, sifted
  • 1 tablespoon or 1 tablespoon grand marnier
  • 1 teaspoon fresh ground black pepper
  • 1 pinch salt
  • 6 ounces mascarpone cheese
  • 6 ounces creme fraiche
  • 1 tablespoon orange flower water, to taste
  • 1 pint strawberry
  • mint sprig, for decoration

  • 1 heat the butter, sugar, syrup, lemon juice and grand marnier gently together in a saucepan until the butter melts and the sugar has dissolved. remove the pan from the heat, mix in the flour and leave to cool.
  • 2 preheat the oven to 180ºc/350°f line 2 baking trays with non-stick baking paper with 6 circles of about 5 cm (2") marked on them, with good space between each. alternatively, place this template under a silpat – the circles will show through and you can slide the template out and reuse it. place a teaspoon of the mixture in the centre of each circle and smooth out to the edges of the circle with a wet flat knife or back of a spoon. spread them thinly, but not so thin that there are holes. bake for 8-10 minutes, or until lightly browned. to ensure enough time to roll the snaps, put one tray into the oven 5 minutes before the other.

  • 1 1/2 teaspoons turmeric

Recipe

  • 1 place sliced cucumbers and onions into a large bowl and mix in salt. cover with ice and let sit for 2 hours. transfer to colander and rinse well, allow to drain.
  • 2 in canner water should be hot to receive the jars.
  • 3 in large saucepan combine remaining ingredients and bring to low boil, stirring to disolve sugar. stir in cucumbers and onions and bring to a boil, allowing to boil hard for 30 seconds.
  • 4 remove from heat and ladle the vegetables into hot jars (1 pint) and fill to 1/2 inch. ladle in liquid to 1/2 inch headspace and remove , adding more liquid if needed.
  • 5 wipe rims of jars, center warmed lids and tighten rings to fingertight and place into canner and insure that water is 1 inch above the lids.

  • 7 lbs green tomatoes
  • 1 cup pickling lime (can be found in grocery stores where canning supplies are located)
  • 5 lbs sugar
  • 1 1/2 quarts white vinegar
  • 1 tablespoon whole cloves
  • 5 small cinnamon sticks
  • 1 tablespoon whole allspice
  • 1 teaspoon celery seed
  • 1/4 teaspoon ground mace
  • 3 inches fresh ginger, peeled and sliced into 1/4 inch thick rounds

Recipe

  • 1 wash tomatoes thoroughly, cut away any blemishes or bad spots, and cut into 1/4" thick slices.
  • 2 combine 2 gallons water and pickling lime in a large glass or plastic bowl; not metal.
  • 3 add tomatoes, and soak for 24 hours, mixing a couple times.
  • 4 drain tomatoes, cover with fresh water, and soak 4 hours longer, changing water every 1/2 hour, then rinse and drain well.
  • 5 in a large nonreactive pot, combine vinegar and sugar, and bring to a boil.
  • 6 while the mixture is heating, combine all spices in a double layer of rinsed cheesecloth, and tie cheesecloth into a pouch with string.
  • 7 place spice-pouch in boiling syrup, and continue to boil for 15 minutes.
  • 8 remove from heat, and add sliced tomatoes.
  • 9 stir gently, cover with a clean towel, and let stand overnight, stirring gently a couple of times if you think of it.

  • 15 slide a plastic chopstick or wooden skewer along the insides of the jars to release air , and tap each jar lightly on counter a couple of times to release more.
  • 16 wipe the mouth of each jar with a clean damp cloth, place a hot sterilized lid on each jar, and screw on bands firmly.
  • 17 process in a boiling-water bath for 10 minutes, starting timing after water returns to a boil.
  • 18 cool, making sure that lids have sealed.
  • 19 jars that leak during processing or don’t seal should be stored in the refrigerator and used within a couple of weeks.
  • 20 store sealed jars at room temperature if desired.
  • 21 pickles can be served after 24 hours but are better if allowed to mellow in a cool, dry place for 2-3 weeks before using.

  • 1 tablespoon chili powder
  • 1 (14 1/2 ounce) can whole tomatoes
  • 1/4 cup no-added-salt tomato paste

  • 1 lb maui onion
  • 1 medium red bell pepper
  • 1/2 cup kosher salt
  • 5 cups water
  • 2 cups vinegar
  • 1/2 cup rice vinegar
  • 2 cups light brown sugar
  • 3 tablespoons mustard seeds
  • 1 teaspoon turmeric
  • 1 pinch saffron
  • 10 whole cloves
  • 10 allspice berries
  • 2 bay leaves

Recipe

  • 1 rinse cucumbers under cold water and trim the ends. rinse red bell pepper under cold water, slice in half lengthwise and remove seeds. peel maui onions and set aside.
  • 2 use a mandoline and slice cucumbers about 1/4 thick. place cucumbers into a bowl. slice maui onion and red bellpepper about 1/4 inch thick and add to cucumbers.
  • 3 add kosher salt and water to the cucumbers. stir pickles, cover with plastic and let stand for 3 hours. rinse the cucumbers, onions and bellpeppers under cold water.
  • 4 in a large saucepan add vinegar, brown sugar, mustard seeds, tumeric, saffron, whole cloves, whole allspice berries, bay leaves and cucumbers. bring cucumbers to a full boil and reduce to slow simmer for 15 minutes uncovered. set pickles aside and let stand until they reach room temperature.
  • 5 place pickles into a containers and refrigate for several hours.
