Chocolate Knockout Bombs

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 12
  • 2 eggs
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla sugar
  • 4 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 2/3 cup sifted flour
  • 3 1/2 ounces melted butter or 3 1/2 ounces margarine
  • 3 1/2 ounces melted butter or 3 1/2 ounces margarine
  • 4 tablespoons sugar
  • 2 teaspoons flour
  • 1/3 cup milk (not low-fat!)
  • 2 teaspoons unsweetened cocoa powder
  • 1/3 cup whipping cream

Recipe

  • 1 beat eggs and sugar together thoroughly, until mixture is as light and fluffy as possible.
  • 2 mix in the other ingredients and make mixture smooth and lump-free.
  • 3 pour mixture into small, fluted baking tins (or paper ones) and bake in a 325f oven for 12- 15 minutes.
  • 4 the time can vary depending on how the flour is feeling that day when you take them out, they should still be a little"wobbly" and rather immediately sink in the middle.
  • 5 let them cool in the baking pan.
  • 6 mix the ingredients for the"middle" mixture and let it boil just until it starts to thicken.
  • 7 if you stir all the time it won't stick so much to the bottom of the saucepan.
  • 8 pour mixture in the hollows in the middle of the muffins.
  • 9 let cool and put the muffins, one by one, in the freezer.
  • 10 of course you are supposed to put them in something else once they've frozen properly.
  • 11 take them out 15- 20 minutes before you eat them- by then they should be perfect in texture and taste!

Blackberry Port Wine Sauce

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1/2 pint blackberry
  • 1 cup port wine
  • 1 (14 1/2 ounce) can beef broth
  • 1 shallot, diced
  • 1 teaspoon honey
  • 2 tablespoons butter, softened
  • 1/2 teaspoon salt

Recipe

  • 1 heat blackberries, port, broth, shallot and honey to boiling in a medium saucepan.
  • 2 reduce heat to medium; cook, stirring occasionally, until reduced to about 1 1/2 cups, about 25 minutes.
  • 3 remove from heat.
  • 4 place mixture into a chinois (or a strainer with fine mesh) fitted over a medium saucepan.
  • 5 force mixture through the chinois with wooden spoon, pressing well to remove all blackberry seeds.
  • 6 stir butter and salt into sauce.

Apricot Cream Cheese Bars

  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 cups apricots, chopped
  • 1 cup water
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups rolled oats
  • 1 cup brown sugar
  • 1 1/2 cups flour
  • 1 cup margarine

Recipe

  • 1 preheat oven to 350°f prepare 9x11 glass baking dish with nonstick cooking spray.
  • 2 next mix rolled oats with margarine, flour, baking soda, salt, and brown sugar, using your hands. mixture should be loose but not dry. you should be able to make a ball and have it stick without it falling apart. press half of this mixture into the bottom of the pan. set side the other half for topping.
  • 3 now mix together apricots, water, sugar, and 1/2 teaspoons vanilla. place in saucepan on the stove on medum-high for 30 minutes until the apricots are soft and mushy.
  • 4 next mix the cream cheese, powdered sugar, egg and 1/2 teaspoons vanilla in small mixing bowl. mix it well. pour it over the base.
  • 5 pour the apricot mixture over the cream cheese mixture. finally, crumble remaining oat mixture on top.
  • 6 bake at 350f for 30 minutes or until top is golden brown.
  • 7 store in airtight container in refrigerator.

Creamy Roasted Asparagus Soup

  • 3 slices bacon
  • 1 tablespoon butter
  • 1 1/2 lbs fresh asparagus
  • 2 tablespoons chicken base
  • 12 ounces evaporated milk
  • 1 (10 1/2 ounce) can low-fat cream of mushroom soup
  • 2 cups water
  • 1/4 teaspoon poultry seasoning
  • 1/4 teaspoon mustard powder
  • 1/8 teaspoon celery seed
  • salt, to taste
  • pepper, to taste
  • 1 tablespoon cornstarch

Recipe

  • 1 to prep asparagus, rinse thouroughly and snap off dry ends of stalks or your soup will be grainy and gross. roughly chop stalks, leaving about 1" left of the tops where the leaves are. separate these tips for later use.
  • 2 melt butter in heavy bottomed stock pot or dutch oven over medium-high heat.
  • 3 chop raw bacon into 1" sections, add to melted butter and sautee until starting to brown.
  • 4 add the chopped asparagus, leaving tips out. stir occasionally until asparagus starts to brown a fair amount.
  • 5 once browned reduce heat to medium then pour in chicken base, milk, soup, water and seasonings. bring to simmer stirring until smooth. puree with immersion blender or in regular blender in batches.
  • 6 once smooth, stir cornstarch in with a few tablespoons of water until smooth, stir into the simmering soup. mix in the florets set aside earlier.
  • 7 simmer for 10-15 minutes until asparagus tips have softened.

Crabmeat Pasta

  • 1 (16 ounce) box egg noodles
  • 1 pint heavy cream
  • 1/2 cup butter
  • 1 garlic clove
  • 8 ounces imitation crabmeat

  • 1 cook noodles according to directions-drain well.
  • 2 melt butter in saute pan on low until melted add heavy cream and keep warm.
  • 3 in small fry pan add enough olive oil to just cover bottom of pan. add shrimp and crab and garlic. cook 6-8 minutes.
  • 4 add noodles to saute pan , add seafood mixture ,parsley and parmesan cheese.

Chili Veggie Kebabs

  • 3 tablespoons chili powder
  • 16 mini sweet peppers, halved lengthwise, stemmed, and seeded

  • 1 heat a grill to medium. if using bamboo skewers, soak in cold water.
  • 2 meanwhile, in a large bowl, stir together the oil and chili powder. add the peppers and tomatoes and toss until well coated. alternately skewer 4 pepper halves and 2 cherry tomatoes onto each skewer.
  • 3 grill the skewers, turning once, until charred and just tender, about 6 minutes.
  • 4 transfer to a serving platter and immediately brush with the chili sauce.

  • 1 boil water in a pan.
  • 2 break chocolate pieces in another bowl.
  • 3 place this bowl inside the pan of boiling water but be sure to see that the boiling water does not enter the bowl having the chocolate pieces.

  • 1 sift flour with salt and baking powder into a mixing bowl.
  • 2 add sugar and mix.

Cantonese Sweet And Sour Spam

  • 2 tablespoons cooking oil
  • 1 large carrot, sliced diagonally
  • 6 green onions, chopped
  • 1 garlic clove, minced
  • 1 small cucumber, cut in chunks
  • 2/3 cup water
  • 1 tablespoon cornstarch
  • 3 tablespoons sugar
  • 3 tablespoons catsup
  • 3 tablespoons vinegar
  • 1 teaspoon ginger
  • 1 teaspoon soy sauce
  • 1 (12 ounce) can spam, diced into 1/2-inch cubes
  • 1 (8 ounce) can bamboo shoots, drained

Chicken Marsala With Pancetta & Cream

Ingredients

  • Servings: 2
  • olive oil
  • 2 ounces pancetta, cut into a 1/4-inch dice (about a 1/4-inch thick slice)
  • flour (for dredging, about 1/2 cup)
  • 4 chicken breasts, cutlets about 1/2 lb. total
  • coarse salt
  • fresh ground black pepper, preferably on the coarse side
  • 1/2 cup dry marsala wine
  • 2 -4 tablespoons heavy cream
  • minced fresh flat-leaf parsley (optional)

  • 1 coat a large skillet lightly with olive oil and set it over medium-high heat.
  • 2 add the pancetta and cook until just crisp and lightly browned.
  • 3 remove with a slotted spoon, leaving the fat in the pan, and set aside.
  • 4 put the flour on a plate.
  • 5 pat the cutlets dry. season them on both sides lightly with salt and amply with pepper.
  • 6 heat the skillet with the pancetta fat over medium high.
  • 7 add more olive oil, if needed, to get about 2 tbs. fat in the pan.
  • 8 when the fat is hot, dredge a cutlet through the flour on both sides.
  • 9 shake off the excess flour and immediately put the cutlet in the pan. do the same with as many cutlets as will fit in the pan without touching.
  • 10 sauté the cutlets, turning once, until browned on both sides; if thin, they should cook through in just a few minutes total. transfer the cooked cutlets to a plate and continue sautéing the rest, adding more oil if necessary.
  • 11 transfer these to the plate as well.
  • 12 pour off the excess fat.
  • 13 with the pan over medium-high heat, add the marsala and scrape up any browned bits from the bottom of the pan.
  • 14 cook until the marsala is reduced by about a quarter.
  • 15 stir in the cream and boil until you get a nicely thickened sauce. return the chicken and pancetta to the pan and turn the cutlets over to coat.
  • 16 let them reheat for 30 seconds to 1 minute. serve with the sauce and a sprinkling of parsley, if you like.

Alton Brown's Creamed Corn

Ingredients

  • 1/2 onion, diced
  • 1 tablespoon butter
  • 2 pinches kosher salt
  • 8 ears fresh corn
  • 1 sprig fresh rosemary, bruised
  • 1 tablespoon sugar
  • 1/4 teaspoon turmeric
  • 2 tablespoons yellow cornmeal
  • 1 cup heavy cream
  • fresh ground black pepper

Recipe

  • 1 in a saucepan over medium heat, sweat the onion in butter and salt until translucent.
  • 2 in a large mixing bowl, place a paper bowl in the middle of the bowl.
  • 3 resting the cob on the bowl in a vertical position remove only the tops of the kernel with a knife, using long smooth downward strokes and rotating the cob as you go.
  • 4 after the cob has been stripped, use the dull backside of your knife to scrape any remaining pulp and milk off the cob.
  • 5 add the corn and pulp mixture to the saucepan and cook over medium high until the juice from the corn has tightened.
  • 6 add the rosemary.
  • 7 sprinkle the corn with the sugar and turmeric.

  • 5 sprinkle top with parsley.
  • 6 refrigerate overnight.
  • 7 serve with crackers.

Chocolate Krispies

Ingredients

  • 2 tablespoons margarine
  • 2 tablespoons sugar
  • 2 tablespoons golden syrup
  • 2 tablespoons cocoa powder
  • 3 cups rice krispies

Recipe

  • 1 put the margarine, sugar and syrup in a saucepan and heat gently until it has all melted and mixed together.
  • 2 remove from the heat and add the cocoa powder. mix inches.
  • 3 add the rice krispies and mix well to coat evenly.
  • 4 drop tablespoonfuls of the mixture into paper cases. chill in the fridge until set.

Alton's Glazed Carrots

Ingredients

  • 1 lb carrot, peeled and cut on the bias 1/4 inch thick (about 7 medium)
  • 2 tablespoons unsalted butter
  • heavy pinch kosher salt
  • 1 cup good-quality ginger ale
  • 1/2 teaspoon chili powder
  • 1 tablespoon fresh parsley, chopped

Recipe

  • 1 in a 12-inch saute pan over medium heat, combine the carrots, butter, salt and ginger ale. cover and bring to a simmer.
  • 2 once simmering, remove the lid, stir, and reduce the heat to low.
  • 3 cover again and cook for 5 minutes.
  • 4 remove the lid, add the chili powder and increase the heat to high.
  • 5 cook, tossing occasionally, until the ginger ale is reduced to a glaze, approximately 4 to 5 minutes.
  • 6 pour into a serving dish and sprinkle with the parsley. serve immediately.

Blackberry Ham Glaze

  • 1/3 cup blackberry liqueur
  • 2/3 cup apple juice (i used unsweetened)
  • 1/3 cup brown sugar, packed tightly
  • 1/3 cup pure maple syrup

  • 1 mix everything in a sauce pan and bring to a boil.
  • 2 reduce to simmer, and simmer stirring frequently until thickened and reduced to a syrup like consistancy.
  • 3 baste ham with glaze during last 1/2 hour of cooking, being careful to keep an eye that it doen't burn.(just baste frequently.

Champagne Sauce

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup heavy cream
  • 1/2 cup champagne

Recipe

  • 1 melt butter in a sauce pan.
  • 2 add flour and whisk into a paste (roux) add cream and champagne. if adding any fresh strawberry or any other fruit juice and or fruit add now. and add a little at a time the amount to your liking, while whisking (or try a little chicken stock instead of fruit).
  • 3 simmer for 10 minutes on med heat.
  • 4 careful not to burn.

  • 1/4 lb butter
  • 2 tablespoons shallots, diced
  • 2 stalks green onions, diced
  • 3/4 cup bell pepper, diced,both green and red

  • 1 lb lump crabmeat, picked clean of shell
  • 1 cup wine
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon pepper

  • 1 teaspoon onion powder
  • steamed rice

Recipe

  • 1 melt butter and add onions and mushrooms, sauteing until tender.
  • 2 add peppers and seasonings and simmer for five minutes.
  • 3 add crabmeat and saute just until the crabmeat is hot, then add the wine and simmer until absorbed and reduced.
  • 4 remove from heat and let stand momentarily.
  • 5 serve over steamed rice.

Crabmeat Deviled Eggs

  • Servings: 12
  • 6 hard-boiled eggs, cut in half
  • 2 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon creole mustard
  • 1/4 cup crabmeat, picked over for shells
  • 2 teaspoons green onions, finely chopped
  • 2 teaspoons capers, drained
  • fresh lemon juice
  • salt, to taste
  • pepper, to taste
  • paprika, for garnish

Recipe

  • 1 mash the egg yolks in a medium bowl.
  • 2 add the mayonnaise, sour cream, and creole mustard, stir to combine.
  • 3 gently stir in the crabmeat, green onions, capers and lemon juice.

  • 5 fill the egg whites evenly with the mixture and garnish with paprika.

Creamy Raspberry Tarts

Ingredients

  • 1 tablespoon brown sugar
  • 2 teaspoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 6 (8 inch) flour tortillas
  • vegetable oil cooking spray
  • 1 cup fresh raspberries or 1 cup blackberry, about 1 half-pint
  • 1/2 cup light cream cheese, softened
  • 1/2 teaspoon almond extract

Recipe

  • 1 combine 1 tablespoon brown sugar, cinnamon, and nutmeg, stir and set aside.
  • 2 cut rounds from each tortilla, using a 3 1/2 inch biscuit cutter, discard excess.
  • 3 brush both sides or tortillas with warm water.
  • 4 coat top side of each round with cooking spray, sprinkle with brown sugar mixture.
  • 5 press each tortilla into a muffin cup.
  • 6 bake at 350 degrees for 14 minutes.
  • 7 cool in pan on a wire rack.

  • 9 rinse berries, drain and set aside.
  • 10 combine cream cheese, almond extract and remaining 2 teaspoons brown sugar in a small bowl, stir well.

  • 2 cups mayonnaise
  • 1/4 cup creole mustard
  • 1 teaspoon crystal hot sauce
  • 1 teaspoon worcestershire sauce
  • 1 lemon, juice of
  • 1/4 cup capers, chopped
  • 1/4 cup prepared horseradish
  • 1/4 cup red onion, minced
  • 1 lb lump crabmeat
  • kosher salt
  • fresh ground black pepper
  • 4 creole tomatoes, sliced thick
  • 1/2 head green leaf lettuce, very thinly sliced

Recipe

  • 1 combine the mayonnaise, creole mustard,hot sauce, worcestershire, and lemon juice in a mixing bowl and mix until smooth.
  • 2 add the capers, horseradish and red onion and mix well.
  • 3 in a separate bowl, sprinkle the crabmeat with the kosher salt and ground pepper.
  • 4 combine with 1/4 cup of the sauce in a bowl and toss gently; do not break up the crab lumps.
  • 5 place 3 slices of tomato in a circle of 4 serving plates.
  • 6 place the lettuce in the center of each plate and top with the crabmeat mixture.
  • 7 garnish with the capers and lemon slices and the remaining sauce on the side.

Breakfast Omelette (scd)

  • 4 ounces ground beef
  • 1 ounce colby jack cheese
  • 3 eggs

Recipe

  • 1 brown beef in pan, separating into small pieces as it cooks.
  • 2 beat eggs in small bowl.
  • 3 grate cheese over ground beef and let it begin to melt in the pan.
  • 4 add eggs to pan, allowing them to surround the beef and cheese. when the bottom has become done enough, fold omelette and allow the eggs to cook to desired firmness.

  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon vanilla

Recipe

  • 1 spray muffin pan with pam.
  • 2 mix flour, sugar, baking powder, baking soda and salt.
  • 3 add berries and toss.

Creamy Roasted Red Pepper Soup

  • 1 heat a large frying pan and add the bacon. dry fry for 3 or 4 minutes until it starts to brown.

  • 1 preheat broiler and place rack about 6" from heat source.
  • 2 line a broiling pan with foil.
  • 3 combine tomato paste, chili powder and a pinch of salt in a small bowl.
  • 4 rub tomato mixture onto steak, using fingers to press as much as possible onto meat.
  • 5 place steak on pan and broil for about 6 minutes per side for medium rare.
