Craig's Barbecue Sauce

Total Time: 30 mins Preparation Time: 30 mins

Ingredients

  • 1 (14 ounce) can crushed tomatoes
  • 1 (8 ounce) jar chili sauce
  • 1 1/2 cups apple cider vinegar
  • 1 cup brown sugar
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 3 tablespoons mustard
  • honey

  • 1 combine and simmer until it reaches the preferred consistency.

Creamy Mushroom And Bacon Soup

Ingredients

  • Servings: 4
  • 8 slices bacon, chopped
  • 2 shallots, finely diced
  • 4 -5 cups button mushrooms, quartered
  • 1 teaspoon garlic, minced
  • 2 teaspoons fresh rosemary leaves
  • 4 tablespoons flour
  • 4 cups chicken broth
  • splash marsala wine (optional)
  • 1/2 cup half-and-half
  • 1/2-3/4 teaspoon salt
  • pepper

Recipe

  • 1 in a large saucepan or dutch oven pan, cook the bacon over medium heat until crispy. remove the bacon with a slotted spoon and set aside. add the diced shallots to the bacon grease and cook for about 3 minutes, until tender. add the mushrooms, rosemary and garlic to the pan. cook for about 5 minutes, until the mushrooms are tender and golden. return the cooked bacon to the pan.
  • 2 sprinkle the flour over the mushrooms and bacon and stir to coat. cook for about 1 minute, stirring constantly.
  • 3 pour the chicken broth into the pan. if desired, add a splash of marsala wine. stir to combine. bring the mixture to a simmer, stirring frequently. it should begin to thicken as it simmers. simmer for a few minutes, then reduce heat and add the half and half.
  • 4 remove about a cup of the soup with a bunch of the mushrooms when cool enough to safely handle, blend the cup of soup until smooth. return the blended mixture to the pan with the rest of the soup.
  • 5 or just use a stick blender right in the pan to make a lovely smooth soup.
  • 6 season with the salt and pepper.

Chili-rubbed Lamb Tenderloin

  • 3 tablespoons extra virgin olive oil, plus more
  • extra virgin olive oil, for grill pan
  • 3 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 lamb tenderloin (about 1 pound)
  • 1 1/2 tablespoons sesame seeds
  • coarse salt & freshly ground black pepper

Recipe

  • 1 preheat oven to 400 degrees. combine oil, garlic, and chili powder in a large, shallow dish. add lamb and turn to coat evenly with chili mixture. sprinkle lamb with sesame seeds, and press seeds into meat. season with salt and pepper.
  • 2 heat a grill pan over medium-high heat and brush with oil. add lamb and cook until browned and grill marks appear, 2-3 minutes per side.
  • 3 transfer pan to oven. roast lamb to desired doneness, 17-18 minutes for medium.

  • 2 mix corn meal, water and salt; add the crushed cracklings.
  • 3 form into oval patties and fry until golden brown.
  • 4 place in a hot oven to finish crisping.

Champagne Carrots With Dill

  • 1 lb carrot, thinly sliced
  • 2 tablespoons butter
  • 1/4 cup beef stock
  • 1/2 cup champagne
  • 1 tablespoon lemon juice, fresh
  • 1 teaspoon dried dill weed

Recipe

  • 1 melt the butter in a heavy saucepan. saute the carrots for a few minutes over medium heat until they begin to brown. add the beef stock and champagne and cover.
  • 2 cook until barely tender but still a bit firm. remove cover and place on high heat until the liquid is almost cooked away. add the lemon juice and dill weed and serve.

  • 1/2 cup freshly squeezed orange juice
  • 1/2 cup reduced-sodium chicken broth
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chili powder
  • 1 tablespoon dark brown sugar
  • 2 -3 cloves garlic, chopped
  • 1 1/2 teaspoons oregano
  • 1/2 teaspoon ground cumin

  • 6 boneless skinless chicken breast halves

  • 6 boneless skinless chicken breasts

  • 2 medium garlic cloves, minced
  • 3/4 cup chicken stock
  • 3/4 cup champagne

Recipe

  • 1 pound chicken breasts to even thickness. sprinkle with 1/2t lemon juice and pepper to your liking.

  • 1 beat the cream cheese with electric mixer until fluffy.

  • 2 cups flour
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon baking powder

  • 1/4 cup grated sharp cheddar cheese

  • 2 tablespoons milk

Ingredients

  • Servings: 6
  • 3 whole english muffins, split
  • 2 cups fresh spinach, cleaned
  • 1 small tomato, diced
  • 1/3 cup fresh sweet red pepper, diced
  • 4 green onions, chopped
  • 1 garlic clove, minced
  • 2 -3 slices bacon, crispy fried
  • 3 eggs, scrambled
  • 1 tablespoon extra virgin olive oil
  • 1 cup shredded mozzarella cheese or 1 cup any cheese
  • salt
  • fresh ground pepper

Recipe

  • 1 break up the crispy bacon into 1/2" pieces.
  • 2 in a skillet heat the oil. add spinach, bacon, garlic, sweet pepper, tomato, onions, paprika and saute until spinach is wilted. remove spinach mixture and set aside.

  • 9 pop the baking sheet under the broiler until the cheese is melted, about 1-2 minutes.

Amaretto Carrots

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 lb carrot, sliced
  • 1/4 teaspoon salt
  • 2 teaspoons amaretto liqueur
  • 2 teaspoons almond extract
  • 2 tablespoons butter
  • 1 tablespoon cornstarch
  • 1/3 cup honey

Recipe

  • 1 place carrots in a medium saucepan; cover with water (about 1 1/2 cups). add salt; cook over medium heat until fork-tender, about 10 minutes.
  • 2 remove carrots to a warm dish and set aside. ladle a tablespoon or two of cooking liquid into a small dish and set aside to cool.
  • 3 add amaretto, almond extract and butter to saucepan; stir constantly until butter is melted.
  • 4 whisk cornstarch into the small dish of reserved (cool) liquid; whisk cornstarch mixture into saucepan and continue cooking until sauce is thickened.
  • 5 stir in honey.

Creamy Mushroom Sauce For Steaks

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 lb fresh mushrooms, sliced
  • 1/2 cup unsalted butter
  • 2 cups whipping cream

Recipe

  • 1 saute mushrooms in butter in a skillet over medium heat for 2 minutes.
  • 2 add whipping cream and mix well.
  • 3 bring to a boil, stirring constantly.
  • 4 bring to a rolling boil, stirring occasionaly.
  • 5 boil until mixture is reduced by 1/2.
  • 6 serve with your favorite steak and enjoy!

Champagne Fruit Puree

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 1 1/4 kg caster sugar
  • 1 liter water
  • 500 g tinned peaches (825g tin, drained)
  • 1 tablespoon lemon juice
  • 300 ml sugar syrup
  • 250 g raspberries or 250 g strawberries
  • 100 ml orange juice
  • 200 ml sugar syrup
  • champagne or sparkling wine, to serve

Recipe

  • 1 to make sugar syrup (which must be made in advance and allowed to cool before adding puree mixture).
  • 2 place sugar and water in a saucepan. stir to dissolve sugar and then bring to the boil. remove from the heat and allow to cool. store in a container in the fridge (it will keep at least a month).
  • 3 for a peach champagne fruit puree ~
  • 4 puree peaches, lemon juice and sugar syrup until smooth, pass through a fine sieve. pour a little puree into the bottom of a glass and top with your favourite champagne or sparkling wine.
  • 5 raspberry champagne fruit puree ~.
  • 6 puree raspberries or strawberries, orange juice and sugar syrup until smooth then pass through a fine sieve. pour sparkling wine into a glass until it is two-thirds full. add about 30ml of puree to each glass and top with a little more wine before serving.

  • 1 melt butter in 10 inch skillet over medium heat.
  • 2 cook onions for 3- 5 minutes or until tender.

  • 4 stir in half& half and sherry and cook for another 2 minutes- just to warm.

Creamy Mashed Turnips And Parsnips (vegan)

  • 2 large turnips
  • 4 large parsnips
  • 1/4 cup vegan margarine (earth balance buttery spread)
  • 1/4 cup plain soymilk (more or less as needed)
  • 2 tablespoons vegan mayonnaise (vegenaise...optional, but recommended for super creaminess)

Recipe

  • 1 bring a large pot of water to a boil. meanwhile wash your veggies and chop them into large cubes.
  • 2 add the veggies to the boiling water and cook for about 20 minutes. when they are tender, drain them, return them to the pot, and mash them with whatever mashing utensil you have on hand.

  • 125 g sugar
  • 1 egg
  • 155 g self-raising flour (just over 1 cup)
  • almonds or cherries (optional)

  • 1 put butter in saucepan, let it burn a light brown.
  • 2 let butter cool, but not set.
  • 3 beat in sugar.
  • 4 add egg, and beat again.
  • 5 lastly add self-raising flour.

  • 3 cups broccoli slaw mix

Ingredients

  • 3 tablespoons olive oil, divided
  • 1 lb tempeh, cubed
  • 1 red bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 teaspoons dried thyme or 2 tablespoons chopped fresh thyme
  • 1/4 teaspoon salt
  • fresh black pepper
  • 4 large leaves swiss chard, torn into pieces (or any leafy green)

  • 1 preheat a large, heavy-bottomed pan over medium heat. saute the tempeh in 2 tablespoons olive oil for about 7 minutes, stirring often, until lightly browned.

Cracker Lamb Loin

  • 1 if you have a mortar and pestle use it to gind up your saltine crackers. you want these to be as fine as you can get. it is ok if you have bigger pieces of the cracker but you really want it the crackers to be finely ground if you can. if you have a food processor use that. anything will work. so do what works for you.
  • 2 i like to season up the crackers so i add salt, pepper and greek seasoning to the crackers. some greek seasonings do not have salt so please be sure to add extra greek seasoning and a little bit more salt. i liberally add the seasonings to the crackers. i also add the seasoning mixture to my milk and eggs mixture as well. do what sounds good to you.
  • 3 next you are going to want to beat 1 egg and slowly add two tablespoons of milk. this is the glue for your meal. this is how your crackers will stick so well to your lamb loins.
  • 4 put a little extra virgin olive oil in a non stick pan and turn the heat onto med. high heat. while it is warming up dredge your lamb loins into your eggs mixture and then into your crackers. be sure that the top and bottom of your porn loin has a decent coat of crackers. then add your lamb loins into the pans. you want your pan to be hot but not screaming hot.
  • 5 for thin slices of lamb loin i usually do about 7 minutes on each side. feel free to cut the thickest piece of meat you have to see if it is finished cooking. each side of your lamb loin should have a beautiful golden brown color. remember thicker pieces of lamb loin must be cooked longer. if you notice that the coating for your lamb is browningway too fast drop the heat. your pan is way too hot and you will not cook this meal properly.

Recipe

  • 1 drain and rinse the chilies, and cut a slit down the side of each; gently remove seeds& pith inside.
  • 2 stuff each chili with a 1/2-inch square piece of cheese 1-inch shorter than the chili; slightly overlap the cut edges of the chili to hold cheese inside.
  • 3 roll each chili in flour in a shallow pan to coat all over, gently shaking off excess.
  • 4 beat the egg whites into soft peaks.
  • 5 separately beat the yolks with 1 tbs water plus the flour and salt until thick& creamy.

  • 7 heat about 1½ inch of oil in a large skillet over medium heat.

Basic Pizza Dough

  • 3 add the olive oil and gradually add enough of the warm water to make a soft dough. the amount of water will vary according to the flour but the dough must be malleable.
  • 4 knead the dough on a floured surface until smooth and elastic - about 10 minutes.
  • 5 place dough back in clean lightly oiled bowl and turn it around to coat it with some of the oil; cover with cling wrap and leave in a warm place to "prove".

  • 1 keeping chicken breasts partially frozen, cut them into thin slices. let thaw.
  • 2 sprinkle breast meat with salt and pepper.
  • 3 melt butter and oil in large frying pan over medium high heat.
  • 4 quickly cook chicken slices in batches, turning until lightly browned but not totally cooked through keeping them very tender (you’ll finish cooking them later).
  • 5 transfer to a platter and keep warm.

  • 1 slice the chicken breasts widthwise into very thin slices.
  • 2 heat the olive oil in large skillet.
  • 3 add the onion and cook until softened but not browned.

  • 5 add the sliced chicken to the skillet and cook gently for 5 - 10 minutes until all are lightly browned and the chicken is tender.

  • 1 lb red bell peppers or 1 lb green bell pepper, cut into 1 inch square pieces

  • 1 combine cornstarch, soy, sherry, and 1 teaspoon water in a bowl.
  • 2 stir and coat chicken with this mix, then add 1 1/2 teaspoons oil and marinate for 15 minutes.
  • 3 prepare cooking sauce by mixing 1 tablespoon each soy sauce and cornstarch, 1/2 teaspoon sugar, and 1/2 cup chicken broth or water.

  • 5 heat wok or frying pan over high heat.

  • 8 stir-fry chicken in this mixture until opaque (roughly 3 minutes)- remove from pan.

  • 10 when hot, add and stir-fry peppers and onion for 40 seconds.
  • 11 mix in 1 tablespoon water and cook 1 minute.
  • 12 return chicken to pan and cook, stirring until sauce boils and thickens.

Chicken In Creamy Pan Sauce

  • 1 lb boneless skinless chicken breast (about 4 small halves)
  • 2 tablespoons flour
  • 1 tablespoon oil
  • 3/4 cup chicken broth
  • 4 ounces cream cheese, cubed
  • 1 tablespoon parsley
  • 2 tablespoons fresh basil

Recipe

  • 1 place chicken inside a resealable plastic bag, along with the flour, seal bag. shake chicken around a bit to coat evenly with the flour. set aside.
  • 2 heat oil in a large skillet on medium heat. add the chicken and cook 5-6 minutes on each side or until it's cooked through. remove chicken, reserving dripping sin the skillet. cover chicken to keep warm.
  • 3 add broth to the skillet. stir with a wooden spoon to scrape up all those flavorful browned bits from the bottom of the skillet.
  • 4 add the cream cheese. cook 2-3 minutes or until cream cheese is melted and the sauce starts to thicken, stirring constantly with a wire whisk.

  • 6 transfer chicken to a serving platter. sprinkle with parsley. you can also top it with a cup of quartered cherry tomatoes. then drizzle with sauce and then 2 tbsp of fresh basil.
