Bercy Butter

Ingredients

  • Servings: 4
  • 2 shallots or 1/2 small onion, chopped
  • 3 tablespoons dry wine
  • 1/4 cup butter
  • 2 teaspoons chopped parsley

Recipe

  • 1 in a small saucepan reduce the wine to 1 teaspoon, cool.
  • 2 beat butter until soft.
  • 3 beat the shallots, wine, and parsley into the butter.
  • 4 chill, shape into balls, curls, or logs, serve.
