Cranberries In The Sun

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 11 ounces canned mandarin orange sections
  • 1/2 cup whipping cream
  • 1 cup cooked rice
  • 1/4 teaspoon orange peel, shredded
  • 8 ounces jellied cranberry sauce (1 cup)
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1 tablespoon lemon juice
  • 1 large orange, peeled and sliced 1/4 inch thick
  • 4 -8 lettuce leaves

Recipe

  • 1 drain mandarin oranges, reserving 1 tablespoon liquid.
  • 2 whip cream; fold in rice, orange peel, and mandarin oranges. chill.
  • 3 in small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup. cook and stir until mixture is thickened and bubbly.
  • 4 cool sauce to room temperature.
  • 5 spoon mounds of rice mixture on lettuce leaves.
  • 6 halve orange slices and arrange around mounds.
  • 7 spoon cranberry sauce on top.
