Ingredients
- Servings: 4
- 11 ounces canned mandarin orange sections 
- 1/2 cup whipping cream 
- 1 cup cooked rice 
- 1/4 teaspoon orange peel, shredded 
- 8 ounces jellied cranberry sauce (1 cup) 
- 1 tablespoon sugar 
- 1 teaspoon cornstarch 
- 1 tablespoon lemon juice 
- 1 large orange, peeled and sliced 1/4 inch thick 
- 4 -8 lettuce leaves 
Recipe
- 1 drain mandarin oranges, reserving 1 tablespoon liquid. 
- 2 whip cream; fold in rice, orange peel, and mandarin oranges. chill. 
- 3 in small saucepan, break up cranberry sauce; stir in sugar, cornstarch, lemon juice, and reserved mandarin orange syrup. cook and stir until mixture is thickened and bubbly. 
- 4 cool sauce to room temperature. 
- 5 spoon mounds of rice mixture on lettuce leaves. 
- 6 halve orange slices and arrange around mounds.
