African Peanut Soup

Ingredients

  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 2 large red bell peppers, chopped
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes, with liquid
  • 8 cups vegetable broth or stock

  • 1/4 teaspoon chili powder (optional)
  • 2/3 cup extra crunchy peanut butter
  • 1/2 cup uncooked brown rice

  • heat oil in a large stock pot over medium high heat. cook onions and bell peppers until lightly browned and tender, stirring in garlic when almost done to prevent burning. stir in tomatoes, vegetable stock, pepper, and chili powder. reduce heat to low and simmer, uncovered, for 30 minutes.
  • stir in rice, cover, and simmer another fifteen minutes or until rice is tender. stir in peanut butter until well blended, and serve.

Chef John's Chocolate Egg Cream

Ingredients

  • Servings: 1
  • 1 ounce chocolate syrup
  • 1 ounce cold milk
  • 8 ounces chilled seltzer water

Recipe

    Preparation Time: 5 mins Ready Time: 5 mins

  • pour chocolate syrup into a large glass. pour milk on top of chocolate syrup; stir until completely incorporated and smooth, about 30 seconds.
  • slowly pour seltzer water into chocolate mixture, stirring constantly. mixture will foam and bubble. serve immediately.

Broccoli Chicken Bake

Total Time: 1 hr 20 mins Preparation Time: 1 hr Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 -6 boneless chicken breasts, deboned and flattened to preferred thickness with meat mallet
  • salt
  • pepper
  • olive oil or other oil, you prefer
  • ritz cracker
  • 1 cup butter (1/2 pound) or 1 cup margarine (1/2 pound)
  • 2 cups heavy cream or 2 cups half-and-half or 2 cups milk
  • 4 tablespoons flour
  • 3/4 cup grated cheddar cheese (you may want more cheese, add to your taste)
  • fresh broccoli florets or 1 lb frozen broccoli floret, cooked to tender crisp

Recipe

  • 1 wash and debone and remove the skin from the chicken breast. dry meat with paper towels. rub both sides of chicken breasts with small amount olive oil (or other oil you prefer.) season both sides of chicken breasts with salt, pepper, seasonings you prefer.
  • 2 roast chicken in covered dish in oven at 350 degrees until tender and no blood runs from meat when pierced with a fork. place cooked chicken breasts in another baking dish.
  • 3 cover with crushed/ broken/crushed crackers.
  • 4 make sauce:
  • 5 over medium heat melt the margarine/butter in saucepan. whisk in the flour until well blended and smooth. add the cream/half and half/ milk to this and whisk until smooth.
  • 6 add cheese to this while whisking smooth. when sauce smooth add broccoli and stir gently with spoon to blend broccoli and sauce evenly. pour sauce over chicken breasts and crackers. put back in oven for a few minutes to heat through and allow sauce to melt/cook into crackers. serve with salad, favorite vegetables.

Brazilian Black Bean Stew

Ingredients

  • 1 tablespoon canola oil
  • 1/4 pound chorizo sausage, chopped
  • 1/3 pound cooked ham, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 (1 pound) sweet potatoes, peeled and diced
  • 1 large red bell pepper, diced
  • 2 (14.5 ounce) cans diced tomatoes with juice
  • 1 small hot green chile pepper, diced
  • 1 1/2 cups water
  • 2 (16 ounce) cans black beans, rinsed and drained
  • 1 mango - peeled, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt

  • heat the oil in a large pot over medium heat, and cook the chorizo and ham 2 to 3 minutes. place the onion in the pot, and cook until tender. stir in garlic, and cook until tender, then mix in the sweet potatoes, bell pepper, tomatoes with juice, chile pepper, and water. bring to a boil, reduce heat to low, cover, and simmer 15 minutes, until sweet potatoes are tender.
  • stir the beans into the pot, and cook uncovered until heated through. mix in the mango and cilantro, and season with salt.

Broccoli Chicken Dijon

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1/2 cup reduced-sodium chicken broth
  • 1 tablespoon light soy sauce
  • 4 cups broccoli florets
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 lb boneless skinless chicken breast, cut into thin strips
  • 2 tablespoons grey poupon dijon mustard

Recipe

  • 1 mix chicken broth and soy sauce; set aside.
  • 2 heat oil in a large skillet, and on medium- high heat cook and stir broccoli and garlic until crisp-tender.
  • 3 remove from skillet; cover to keep warm.
  • 4 add chicken to skillet; cook and stir 3 to 4 minutes or until cooked through.
  • 5 add broth mixture; mix well, and bring to boil. reduce heat to medium-low, and stir in mustard until well blended.
  • 6 return broccoli mixture to skillet; mix lightly.
  • 7 stirring occasionally, cook until heated through.

Broccoli Chicken Pizza

Ingredients

  • 1 pizza crust (i use no-knead food processor thin crust pizza dough)
  • 2 cups broccoli (steamed and chopped)
  • 1/2 lb boneless chicken breast
  • 1 tablespoon olive oil
  • oregano (to taste)
  • basil (to taste)
  • 15 ounces part-skim ricotta cheese
  • 1 cup mozzarella cheese (divided)
  • 1 cup cheddar cheese (divided)
  • 1 teaspoon dry mustard
  • 1 teaspoon crushed red pepper flakes (more if you like it hot, less if you don't)

Recipe

  • 1 preheat oven to 425 degrees fahrenheit.
  • 2 prepare dough.
  • 3 while dough is rising or sitting, steam broccoli and cook chicken with olive oil, oregano and basil to taste, until no longer pink.
  • 4 spread the dough into a prepared jelly roll pan.
  • 5 bake for about ten minutes.
  • 6 meanwhile, chop cooled chicken into small chunks and chop steamed broccoli.
  • 7 combine chicken, ricotta cheese, broccoli, 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese, dry mustard, and crushed red pepper.
  • 8 remove crust from oven.
  • 9 spread with ricotta mixture.
  • 10 top with remaining cheese.
  • 11 cook until cheese is browned (10 to 15 minutes).

Broccoli Chicken Fettuccine

  • 4 ounces uncooked fettuccine
  • 1/2 lb boneless skinless chicken breast, cut into 1 inch pieces
  • 1 small onion, halved and sliced
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 1 (10 3/4 ounce) can cream of chicken soup, undiluted
  • 1 cup chicken broth
  • 1 1/2 cups frozen broccoli florets, thawed
  • 1 (4 ounce) can mushroom stems and pieces, drained
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1/4 cup shredded parmesan cheese

Recipe

  • 1 cook fettuccine according to package instructions. meanwhile, in a large skillet, saute the chicken, onion and garlic in butter until no longer pink. stir in the soup, broth, broccoli, mushrooms, onion powder and pepper. bring to a boil.
  • 2 drain fettuccine; add to chicken mixture. reduce heat; cover and simmer for 5 minutes or until heated through. sprinkle with parmesan cheese.

Broccoli Chicken Soup

  • 1/2 lb cooked diced chicken
  • 2 (10 1/2 ounce) cans cream of broccoli soup (diluted, i like to use milk because it's creamier but water will work)
  • 1 (4 ounce) can mushrooms (drained)
  • 1/2 cup frozen crinkle cut carrot (thawed)
  • 1 cup frozen broccoli, florrets (thawed)
  • 1 cup uncooked shell pasta

Recipe

  • 1 cook pasta according to package directions and set aside.
  • 2 in a large soup pot pour in the cream of broccoli soup and stir well.
  • 3 heat on medium, uncovered and stirring often until it comes to a low boil.
  • 4 add the vegetables and chicken and return to boiling.
  • 5 turn heat to low and simmer about 5 minutes.
  • 6 add the pasta and turn off the heat.
  • 7 let stand for about 2-3 minutes, then stir well and enjoy!

Broccoli Chicken Casserole

  • 1 (3 lb) broiler-fryer chickens
  • 1 lb fresh broccoli
  • 1 (10 3/4 ounce) cream of chicken soup, undiluted
  • 1/2 cup mayonnaise
  • 1/2 teaspoon lemon juice
  • 1/2 cup dry breadcrumbs
  • 2 tablespoons butter, melted
  • 1/4 cup sharp cheddar cheese, shredded

Recipe

  • 1 place chicken in a dutch oven, and cover with water. bring to a boil; cover and reduce heat. simmer 1 hour or until tender. remove chicken, and let cool. bone chicken, and chop meat; set aside.
  • 2 trim off large leaves of broccoli. remove tough ends of lower stalks, and wash broccoli thoroughly. separate into spears. cook broccoli, covered, in a small amount of boiling water for 10 minutes or until crisp-tender; drain and set aside.
  • 3 combine soup, mayonnaise, and lemon juice; stir well. set aside.
  • 4 arrange broccoli in a lightly greased 12x8x2 inch baking dish; top with chicken and soup mixture. combine breadcrumbs and butter, stirring well; sprinkle over top of casserole.
  • 5 bake at 350 for 20 minutes. sprinkle cheese over top of casserole; return to oven 5 minutes or until cheese melts.

Broccoli Cheese Stuffed Chicken With Spinach Patties

Ingredients

  • 2 chicken breasts
  • 4 small broccoli florets, heads only, chopped
  • 4 basil leaves, shredded
  • 4 sun-dried tomatoes, sliced thinly
  • 6 -8 tablespoons gruyere, grated (depends on size of breasts, mine were of a good size so i used 8)
  • 4 -6 slices prosciutto (again just depending on size of breast these are just use to secure and i needed 3 per breast)
  • 1/2 cup dry white
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • 1 1/2 teaspoons instant chicken bouillon granules
  • 2 teaspoons mild creamy prepared mustard
  • 2 teaspoons cornflour
  • 1/2 cup cream
  • 300 g baby spinach leaves
  • 1 small red onion, chopped finely
  • 1 garlic clove, crushed
  • 3 slices bacon, chopped
  • 3 tablespoons cream
  • 1/2 teaspoon instant chicken bouillon granules
  • 3 tablespoons parmesan cheese
  • 1 egg, lightly beaten
  • 3/4 cup panko breadcrumbs, flakes (japanese breadcrumbs, available at most supermarkets or specialty asain stores.)

Recipe

  • 1 preheat oven to 180°c.
  • 2 open out chicken breasts, using a meat mallet pound each breast until of equal thickness.
  • 3 divide broccoli between breasts from top to bottom down the centre, top with basil leaves, then sun-dried tomato, finally press cheese firmly over tomato to form a small mound. fold breasts over to enclose filling and wrap prosciutto around each breast to secure.
  • 4 place breasts in a lightly oiled oven proof dish and cook in pre-heated oven for 30-35 min's or until chicken is cooked through.
  • 5 sauce.
  • 6 combine , water, lemon juice, parsley, stock and mustard in a saucepan. heat over med high heat, use a whisk if necessary to combine mustard fully, you don't want lumps.
  • 7 mix a little water with the cornflour and add to sauce stir until mixture thickens, add cream and stir to heat through. serve with chicken.
  • 8 spinach:.
  • 9 heat some water in a pan, plunge spinach leaves into water for only a minute, drain, squeeze out any excess water.
  • 10 in a small fry pan cook bacon, drain on absorbent paper.
  • 11 combine spinach, onion, garlic, bacon, cream, stock and cheese, in a microwave safe bowl, stir well. microwave for about 1 minute to melt cheese, stir again.
  • 12 make sure mixture is cool enough to add egg as you do not want it to cook. add egg and panko flakes.
  • 13 heat some oil in a pan, using a tablespoon divide mixture into roughly 4 equal parts. take spoonful of mixture add to pan press down to form a pattie shape and cook until browned on both sides.
  • 14 to serve: place chicken on a plate, spoon some sauce over, garnish with a basil leaf, place patties on plate and garnish with kumara curls if desired.
  • 15 kumara curls: if you wanted to do this just peel kumara, then using a vegetable peeler peel kumara into strips, heat some oil in a pan (about 1/4 inch deep). add kumara and fry until it curls up and is crisp.

Broccoli Chicken Lasagna

  • 12 lasagna noodles, boiled to al dente
  • 1 tablespoon olive oil
  • 2 chicken breasts, cut into bite-sized pieces
  • 2 (10 ounce) cans cream of chicken soup
  • 3 cups milk
  • 2 -3 garlic cloves
  • salt
  • pepper
  • 2 tablespoons poultry seasoning or 2 tablespoons sage
  • 2 cups fresh broccoli, cut into small pieces
  • shredded monterey jack cheese
  • shredded cheddar cheese

Recipe

  • 1 boil lasagna noodles into a large pot according to directions on package. drain well, and rinse them. you may need to rinse them again if they get too sticky.
  • 2 in a large skillet pan, oil the pan with the olive oil and add the chicken pieces and cook for about 7-10 minutes or until no longer pink.
  • 3 add the canned soups and the milk, being measured in the soup cans. you may need to add some more milk if the sauce becomes too thick.
  • 4 season the sauce well with the garlic, salt and pepper, and the poultry seasoning. you can add other herbs for your taste.
  • 5 add the broccoli to the sauce and cook it for about 5 minutes or so and it is a bright green. you may also add about 2 cups of frozen peas to the sauce as well if you prefer.
  • 6 to prepare the lasagna, using a 1 cup measuring cup, pour about 3 cups of the sauce to the bottom of a large baking pan.
  • 7 using 4 lasagna noodles, layer the noodles in an even layer. top the noodles with about 4 cups of sauce and sprinkle some shredded cheese, about 1 & 1/2 cups worth for each layer.
  • 8 continue to layer the noodles, sauce, and cheese in two more layers, using 4 noodles for each layer.
  • 9 cover the pan with some aluminum foil and put in the fridge when ready to cook.
  • 10 if you are planning on cooking this right away, cook at 350 degrees for about 40 minutes or so.

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 garlic cloves, finely chopped
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon thyme
  • 1/4 teaspoon sugar
  • 3 cups chicken broth
  • 1 lb frozen broccoli cuts, thawed
  • 2 cups frozen corn, thawed
  • 1 cup fat-free half-and-half
  • 1/2 cup sharp cheddar cheese

  • 1 in 4-quart saucepan, melt butter over medium heat. cook onion and garlic in butter 2 to 3 minutes, stirring frequently, until tender. stir in flour, salt, pepper, thyme and sugar.

  • 1/2 cup hickory flavored barbeque sauce

  • heat the olive oil in a large skillet, and saute the onions and celery until soft. mix in the lamb and beef, and cook until evenly browned. do not drain.
  • transfer the lamb and beef mixture to a large stock pot over low heat. stir in the shredded chicken, tomatoes and their liquid, ketchup, and barbeque sauce. season with salt, pepper, and hot sauce. place the whole green pepper into the mixture. cook, stirring occasionally, 2 hours, or until thickened.

  • 1 (10 ounce) package frozen chopped broccoli
  • 1 medium carrot, grated
  • 2 tablespoons butter

  • 1 lb velveeta cheese
  • 1 (10 ounce) can cream of chicken soup
  • 1 tablespoon minced onion flakes
  • 1 tablespoon worcestershire sauce

Recipe

  • 1 in a saucepan bring the water and bouillon cube to a boil. add the broccoli and carrot. cook according to the broccoli package directions and remove from heat.do not drain.
  • 2 in a separate saucepan, melt the butter and slowly stir in the flour. continue stirring while gradually adding the milk. stir in the cheese, soup, onion, worcestershire sauce, salt, and pepper. add the broccoli mixture to the white sauce mixture and cook over medium to low heat until the soup is the desired thickness. enjoy!

Broccoli Chowder(with Vegetarian Options)

  • 4 cups fresh small broccoli florets
  • 2 medium potatoes, diced
  • 1 1/2 cups water (i use vegetable broth if i have it)
  • 2 medium carrots, thinly sliced
  • 1 large onion, chopped
  • 1 celery rib, finely chopped
  • 4 cups milk, divided (can use soy, rice, almond or coconut milk)
  • 2 teaspoons vegetable bouillon granules (the original recipe called for chicken bouillon granules-i use chicken style seasoning)
  • 1 teaspoon worcestershire sauce
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup all-purpose flour
  • 1 cup cubed process cheese (velveeta or other good melting cheese)

Recipe

  • 1 in a large saucepan, combine the first six ingredients. bring to a boil.
  • 2 reduce heat; cover and simmer for 8-10 minutes or until vegetables are tender.
  • 3 add 3 cups milk, bouillon, worcestershire sauce, salt and pepper.
  • 4 in a small bowl, combine flour and remaining milk until smooth; gradually stir into soup. bring to a boil; cook and stir for 2 minutes or until thickened.
  • 5 remove from the heat; stir in cheese just until melted.
  • 6 enjoy!

  • 1 (15 ounce) can creamed corn
  • 1/4 cup minced onion
  • 1 egg, beaten
  • 1/2 cup crushed cracker
  • 3 tablespoons melted butter

  • 1 preheat oven to 350 degees.
  • 2 spray a square baking dish with non stick cooking spray.
  • 3 combine broccoli, corn, egg and onions.

  • 3 note: this is a very rick soup and i use a little more than 2 cups of milk, to thin it some.
  • 4 mix the flour with the chicken broth and add to the melted cheeses.
  • 5 add the cooked broccoli and onions to cheese.
  • 6 season with salt, pepper and garlic salt.
  • 7 continue to cook until all is well blended.
  • 8 note: there were no cooking instructions so this is pretty much how i cook it. you may want to change it up the way you put the ingredient together, but this worked well.

  • pour 2 cans of the black beans into a food processor or blender, along with the can of tomatoes. puree until smooth. set aside.
  • melt butter in a soup pot over medium heat. add the onion and garlic, and season with salt and pepper. cook and stir until the onion is softened. stir in the bean puree, remaining can of beans, beef broth, pumpkin puree, and vinegar. mix until well blended, then simmer for about 25 minutes, or until thick enough to coat the back of a metal spoon. stir in the ham, and heat through before serving.

  • 12 cover and cook about 30-35 min depending on over. chicken should be white and tender when cooked.

  • 1 (8 ounce) container sour cream
  • 2 (8 ounce) packages cream cheese, cut up in chunks

  • 1 1/2 cups shredded cheddar cheese or 1 cup colby-monterey jack cheese
  • 3 tablespoons butter or 3 tablespoons margarine
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon black pepper
  • 4 -6 slices crisp bacon, crumbled (optional)

Recipe

  • 1 put all liquid ingredients and butter or margarine in pot on med-low heat and stir occasionally to make sure everything gets blended.
  • 2 while this is cooking, put frozen broccoli in a glass dish. cover with plastic or saran wrap, and microwave for 2-4 minutes, (just long enough to defrost but not to over-cook). drain broccoli. if you want to steam the broccoli on the stovetop instead you can, just don't overcook it til it gets too soft.
  • 3 as the cream mixture heats up to a slow bubble, check the consistency. once the ingredients are completely melted and slightly bubbly, add broccoli, cover & simmer on low heat for 10-15 minutes, stirring occasionally. if it looks too thick, add more milk. if it looks too thin or watery, add a tablespoon or two of flour.
  • 4 a minute or two before you serve, add the shredded cheese and stir until melted.
  • 5 serve with a nice caesar or garden salad and crusty bread.

Broccoli Cheese Tart

  • 1/2 cup shredded cheddar cheese (2 ounces)
  • 1/4 cup shredded monterey jack cheese (1 ounce)
  • 1/4 cup shredded mozzarella cheese (1 ounce)
  • 1 (10 3/4 ounce) can condensed broccoli cheese soup
  • 5 eggs
  • 1/4 teaspoon garlic powder or 2 garlic cloves, minced
  • 1 (10 ounce) package frozen chopped broccoli, thawed and drained (2 cups)
  • 1 small onion, finely chopped (about 1/4 cup)
  • 1 (9 inch) baked deep dish pie shells

Recipe

  • 1 mix cheddar cheese, monterey jack cheese and mozzarella cheese. set aside.
  • 2 in medium bowl mix soup, eggs, garlic powder, broccoli, onion and 1/2 cup cheese mixture. pour into prepared pie crust.
  • 3 bake at 350 for 45 minutes or until knife inserted in center comes out clean. sprinkle remaining cheese around edge of tart. bake 5 more minutes more. let stand 5 minutes.

  • 1 cup sour cream, daisy brand
  • 1 cup 4% cottage cheese, daisy brand

  • 1/2 cup parmesan cheese, grated
  • 1 pinch salt and pepper, to taste

Recipe

  • 1 preheat oven to 350°f.
  • 2 lightly grease 2-quart casserole dish.
  • 3 parboil broccoli and spread in baking dish.
  • 4 in a medium-sized mixing bowl, beat sour cream, cottage cheese, butter, eggs, and salt and pepper until well blended. fold in cracked matzo and pour mixture over broccoli.

  • 1/4 cup chopped fresh italian parsley
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper

  • 8 ounces half-and-half cream
  • 16 ounces cheddar cheese, shredded (i prefer to use sharp or extra sharp)
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 3 tablespoons worcestershire sauce
  • 2 cups water

Recipe

  • 1 1. in a large sauce pan, melt the butter over med-low heat, then add enough flour to make a smooth rue. continue to cook over med-low heat stirring constantly until the flour is a light tan. add 2 cups of water while stirring and mix well. cook until thick and bubbly.
  • 2 2. turn heat to very low temperature add broccoli, half and half, & worcestershire and continue to cook over low temp until soup gets hot. stir in cheddar cheese and continue to stir until cheese is completely melted. be sure to watch the temp and not let soup get too hot or boil because it will separate you cheese and milk and will make the soup look curdled. once the soup is hot and cheese is melted, turn off heat and serve with croutons or garlic toast.

  • 1 preheat oven to 350 degrees.
  • 2 cook rice, set aside.
  • 3 while rice is cooking -- place broccoli, butter, onion and salt and pepper in bowl. microwave for 10 minute stir then microwave for 5 more minutes.
  • 4 microwave cheese wiz to melt.
  • 5 grease 9 x 13 baking pan.

  • 1 (10 1/2 ounce) can broccoli cheese soup
  • 3/4 lb rice
  • 1 tablespoon butter
  • cooking spray
  • 1/2 cup milk

Recipe

  • 1 begin cooking rice according to package directions.
  • 2 spray a 10-inch skillet with cooking spray and add butter to melt.
  • 3 cut chicken breasts into cubes; place in heated pan. cook chicken until white on all sides drain off butter and chicken on paper towels.
  • 4 spray more cooking spray drained skillet. add chicken back to skillet on low heat.
  • 5 add soup and milk to skillet. cover and simmer about 10 minutes or until heated through; stirring as needed.
  • 6 pour mixture over rice and serve.
