Broccoli Cheese Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 cups chicken broth
  • 1 cup water
  • 1 cup half-and-half
  • 1 cup shredded cheddar cheese
  • 1/2 cup flour
  • 1/8 cup grated onion, juice and all
  • 1/4 teaspoon fresh ground black pepper
  • 4 cups broccoli florets (cut small)
  • 1/2 cup shredded cheddar cheese
  • 2 teaspoons fresh parsley, chopped

Recipe

  • 1 combine chicken broth, water, half-and-half, flour, onion and pepper in large saucepan.
  • 2 whisk to combine.
  • 3 add cheddar cheese.
  • 4 whisk again.
  • 5 turn heat to high and bring to a boil.
  • 6 stir occasionally.
  • 7 turn heat to low.
  • 8 add broccoli and simmer for 15 minutes check broccoli for doneness.
  • 9 cook additional 5 to 10 minutes if necessary.
  • 10 it should be bright green and tender, not olive green and mushy.
  • 11 for each bowl, top with one tbs cheddar cheese and 1/2 tsp parsley.
