Brandied Pepper Steak

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs top round steaks
  • 2 teaspoons kosher salt
  • 2 tablespoons black peppercorns, coarsely ground
  • 1/2 cup clarified butter, melted
  • 2 leaves fresh sage, bruised
  • 1 sprig fresh thyme, bruised
  • 4 sprigs fresh rosemary, bruised
  • 1/4 cup
  • 1/2 cup veal demi-glace
  • 1/2 cup heavy cream

Recipe

  • 1 season steak with salt and pepper, and firmly press seasonings into steak. in a large heavy skillet over medium heat, combine clarified butter, sage, thyme and rosemary. cook until herbs begin to brown, then remove herbs.
  • 2 increase heat to medium-high. sear steak for 5 to 10 minutes on each side. carefully pour over steak. stand back, and ignite the (flames can be quite intense). when flames die, remove steak from pan; keep warm.
  • 3 stir demi glace into pan, and deglaze the pan, scraping up any bits stuck to the bottom. simmer until liquid is reduced by half. stir in heavy cream, and any juices that have accumulated under the steak. adjust seasoning to taste.
  • 4 slice steak and serve with cream sauce.

Branana Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup kellogg's all-bran cereal (i use the extra fiber kind)
  • 1/2 cup milk (i use fat free)
  • 1 cup banana (the riper the better)
  • 1/4 cup shortening
  • 1 egg (i use egg whites)

Recipe

  • 1 stir together flour, sugar, baking powder and salt. set aside.
  • 2 in large mixing bowl, combine kellogg's all-bran cereal, milk and bananas. let stand about 2 minutes or until cereal softens. add egg and shortening. beat well. add flour mixture, stirring only until combined. portion evenly into ten 2 1/2-inch muffin-pan cups coated with cooking spray.
  • 3 bake at 400° f about 25 minutes or until golden brown. serve warm.

Brandied Raspberry Chicken

  • 1 1/2 cups cranberry juice
  • 1 tablespoon maple syrup
  • 3/4 teaspoon brown sugar
  • 1/2 lb raspberries, frozen (thawed) or 1/2 lb raspberries, fresh

  • 2 tablespoons
  • 1 tablespoon almonds, toasted sliced
  • 6 boneless skinless chicken breasts
  • 2 tablespoons olive oil

  • 11 **there should be enough sauce depending on how much you like on your chicken to serve up to 8, however it definitely serves 6.
  • 12 ***i like to serve this with rice and place the extra sauce in a serving dish to pass around if anyone wants to put it on their rice. if doing this i would suggest you make it with 6 chicken breasts not 8.

  • 1/4 cup applesauce
  • 1 tablespoon honey

  • 3 tablespoons unsalted butter
  • 1/2 cup sugar
  • 4 medium fresh peaches, peeled, pitted and cut into 1/4 inch wedges
  • 1/4 cup

  • 1/2 cup firmly packed light brown sugar
  • 1/2 teaspoon ground cinnamon

  • 1 preheat oven to 450°f heat butter in a large saute pan over high heat. add the granulated sugar and stir until it dissolves.

  • preheat oven to 400 degrees f (200 degrees c). lightly grease a baking sheet.

  • 1 wash and trim the chicken livers. pat dry on paper towels.
  • 2 in a baggie, combine the flour, cayenne pepper and mustard powder. season with sea salt and crushed black pepper. add the chicken livers to the baggie and shake to coat.
  • 3 melt the butter in a frying pan and add the sliced mushrooms. saute until golden.
  • 4 brush the ciabatta with olive oil, season with a little pepper and pop under a grill to brown.
  • 5 add the finely chopped garlic and floured chicken livers to the pan and saute for a couple of minutes until the outside of the livers are very lightly browned.
  • 6 pour the into the pan and allow to heat up for a couple of seconds before setting alight. toss the livers around in the pan until the flames die out and allow the to reduce a little.
  • 7 add the cream and stir until the livers are done to your taste. if you'd like the sauce thinner, simply add a little more cream.
  • 8 cut the browned ciabatta in half and put on a heat-proof plate. turn the chicken livers out on top of the ciabatta.
  • 9 crumble the cheese on top of the livers and pop under a hot grill until the cheese melts.
  • 10 garnish with a little chopped flat-leaf parsley and serve.

  • 1 preheat oven to 350.

the best meatballs

Ingredients

  • 1/2 pound ground veal
  • 1/2 pound ground lamb
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 cup freshly grated romano cheese
  • 1 1/2 tablespoons chopped italian flat leaf parsley
  • salt and ground black pepper to taste
  • 2 cups stale italian bread, crumbled
  • 1 1/2 cups lukewarm water
  • 1 cup olive oil

  • combine beef, veal, and lamb in a large bowl. add garlic, eggs, cheese, parsley, salt and pepper.
  • blend bread crumbs into meat mixture. slowly add the water 1/2 cup at a time. the mixture should be very moist but still hold its shape if rolled into meatballs. (i usually use about 1 1/4 cups of water). shape into meatballs.
  • heat olive oil in a large skillet. fry meatballs in batches. when the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (if your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.)

  • 4 1/2 ounces brie round or 4 1/2 ounces camembert cheese

  • 2 place cheese in a small ovenproof dish, just large enough to fit the cheese with about 1 inch all around for the apricots.
