Bran Muffins

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • 2 cups water
  • 6 cups 100% all-bran cereal
  • 3 cups white sugar
  • 1 cup shortening
  • 4 eggs
  • 1 quart buttermilk
  • 5 cups flour
  • 5 teaspoons baking soda
  • 1 teaspoon salt

Recipe

  • 1 cream together 1st two ingredients.
  • 2 cream together sugar, shortening, and eggs.
  • 3 add and blend in buttermilk to sugar mixture.
  • 4 add bran cereal mixture.
  • 5 add dry ingredients.
  • 6 fill muffin cups 2/3 full and bake at 400 for 20 minutes. refrigerate remaining batter in covered container. will keep 8-10 weeks.
