Bran Fruit Loaf

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • 2 cups all-bran cereal
  • 1/2 cup brown sugar
  • 1 cup dates, chopped
  • 1 cup dried apricot, chopped
  • 150 g walnuts
  • 1 cup self-rising flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 large egg, lightly beaten

Recipe

  • 1 preheat oven to 180°c lightly grease and line a 10cm by 20cm loaf tin.
  • 2 combine first 7 ingredients in a medium bowl. pour in milk, oil and egg and stir until well combined.
  • 3 spoon mixture into prepared tin and bake for 30 minutes. cover with foil and bake for a further 15 to 20 minutes or until a skewer inserted into the centre comes out clean. rest in pan for 5 minutes before turning out.
