Bran Fruit Loaf

Ingredients
- 2 cups all-bran cereal
- 1/2 cup brown sugar
- 1 cup dates, chopped
- 1 cup dried apricot, chopped
- 150 g walnuts
- 1 cup self-rising flour
- 1 teaspoon baking powder
- 1 cup milk
- 1/2 cup vegetable oil
- 1 large egg, lightly beaten
Recipe
- 1 preheat oven to 180°c lightly grease and line a 10cm by 20cm loaf tin.
- 2 combine first 7 ingredients in a medium bowl. pour in milk, oil and egg and stir until well combined.
- 3 spoon mixture into prepared tin and bake for 30 minutes. cover with foil and bake for a further 15 to 20 minutes or until a skewer inserted into the centre comes out clean. rest in pan for 5 minutes before turning out.
