Bran Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 large eggs or 1/4 cup egg substitute
  • 1/4 cup sugar
  • 1 3/4 cups nonfat milk
  • 1 1/2 tablespoons margarine, melted
  • 2 cups all-bran cereal (shredded type, not flakes)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Recipe

  • 1 preheat the oven to 400°f.
  • 2 prepare a 12-cup muffin tin with nonstick pan spray or line the muffin cups with paper liners.
  • 3 beat the egg in a medium bowl.
  • 4 add the sugar, milk, and margarine; beat well.
  • 5 stir in the bran.
  • 6 allow to stand 2 minutes for the bran to soften.
  • 7 sift the dry ingredients together into a small bowl; add to the bran mixture.
  • 8 stir just until blended.
  • 9 divide the batter among the 12 muffins cups; each will be about 2/3 full.
  • 10 bake 20 to 25 minutes, until a toothpick inserted in the center of a muffin comes out clean.
