Bran Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup skim milk
  • 2 egg whites
  • 1/3 cup unsweetened applesauce
  • 1 1/2 cups whole wheat flour
  • 1/2 cup splenda granular or 24 (1 g) packets splenda sugar substitute
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 combine the wheat bran and milk in a mixing bowl. let stand 2 minutes or until most of the moisture is absorbed. add the egg whites and applesauce. beat until well blended. sift together the flour, sugar, baking powder and salt. add the dry ingredients to the bran mixture and stir just until all are moistened. spoon batter into muffin cups (3/4 full) and bake 25 minutes or until lightly browned. serve hot.
