Bran Muffins

Ingredients
- 1 cup bran buds (kellogg's all bran cereal preferred)
- 1 cup boiling water
- 3/4 cup butter
- 1 1/2 cups sugar
- 2 eggs
- 2 cups buttermilk
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 1/2 teaspoons baking soda
- 2 cups raisin bran cereal
- 1 cup applesauce
Recipe
- 1 preheat oven to 375f and lightly spray muffin pans with cooking spray or line with cupcake papers.
- 2 mix buds and boiling water.
- 3 cool.
- 4 creme sugar and butter.
- 5 add to bran.
- 6 add eggs and buttermilk.
- 7 add flour, salt, and soda.
- 8 add raisin bran and applesauce.
- 9 stir lightly.
- 10 bake as needed in muffin tins in oven for 15-20 minutes or until golden brown.
- 11 makes 2 quarts that will keep up to four weeks in the refrigerator.
