Bran Muffins

Ingredients
- 2 cups wheat all-bran cereal
- 1 1/4 cups skim milk
- 1/3 cup brown sugar
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 egg
- 1/2 cup applesauce
Recipe
- 1 heat oven to 400. grease bottoms of 12 medium muffin pans.
- 2 in a bowl place cereal, milk, and brown sugar. stir to combine and let stand 5 minutes.
- 3 in another bowl, place flour, baking powder, baking soda, and cinnamon. stir to combine and set aside.
- 4 add egg and applesauce to cereal. stir to combine.
- 5 add bran mixture to flour mixture. stir until just moistened; batter will be lumpy.
- 6 divide among muffin cups, filling each about 2/3 full.
- 7 bake 20 minutes, until firm to touch.
- 8 whole wheat bran muffins: substitute 1 cup whole wheat flour (use whole wheat flour for all the recipes if wanted).
- 9 raisin bran muffins: add 1/2 cup raisins.
- 10 carrot bran muffins: add 1/2 cup shredded carrots and 1/2 cup raisins.
- 11 orange date bran muffins: add 1/2 cup cut-up dates and 1 tablespoon grated orange peel.
