Asparagus Tempura

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1/4 cup yogurt
  • 2 tablespoons light mayonnaise
  • 2 tablespoons dijon mustard
  • 1 tablespoon honey
  • 4 cups vegetable oil
  • 3/4 cup flour
  • 1/2 cup cornstarch
  • 1/4 cup sesame seeds
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup seltzer water, at room temperature
  • 1 lb asparagus

Recipe

  • 1 in a small bowl, stir together the yogurt, mayonnaise, mustard, and honey.
  • 2 in a large saucepan, heat the oil over medium-high heat until the temperature registers 375 degrees on a deep-fry thermometer.
  • 3 meanwhile, in a large bowl, whisk together the flour, cornstarch, sesame seeds, salt, and baking soda.
  • 4 whisk in the seltzer until smooth.
  • 5 add the asparagus to the batter and turn to coat with a pair of tongs.
  • 6 transferring one piece at a time, add about one-quarter of the asparagus to the hot oil and cook, turning, until golden and crisp, 1 1/2 - 2 minutes.
  • 7 drain on paper towels.
  • 8 repeat with the remaining asparagus, allowing the oil to return to 375 degrees between batches.
  • 9 serve hot with the dipping sauce.

Chicken Cutlets Veronique

Ingredients

  • 2 boneless skinless chicken breast halves
  • 3 teaspoons chopped fresh tarragon
  • 2 tablespoons butter
  • 1 shallot, chopped
  • 2/3 cup small green seedless grapes or 2/3 cup red seedless grapes (or both)
  • 1/2 cup dry wine
  • 1/2 cup whipping cream

Recipe

  • 1 place chicken breasts between sheets of waxed paper and pound to even 1/2-inch thickness.
  • 2 peel off paper.
  • 3 sprinkle chicken breasts with 1 teaspoon tarragon, then salt and pepper.
  • 4 melt butter in heavy medium skillet over medium-high heat.
  • 5 add chicken breasts to butter; saute until brown and cooked through, about 4 minutes per side.

  • 1 lb raw chicken, diced
  • 1/4 cup flour
  • 1/3 cup olive oil

  • 1/2 cup celery, sliced
  • 1/2 cup carrot, peeled and cut julienne
  • 1/2 cup broccoli floret
  • 1 tablespoon dried basil

  • 3/4 cup heavy cream

  • 1 cook noodles according to package directions.
  • 2 toss chicken in flour.
  • 3 in large skillet over medium heat, saute coated chicken in oil until browned.
  • 4 add garlic, vegetables, basil and cook for 2 minutes.
  • 5 reduce heat to low; slowly stir in chicken broth and then cream.
  • 6 when the mixture has slightly thickened, stir in hot noodles. season to taste with salt and pepper.

Chicken Cutlets With A Twist

  • 1 egg
  • 2 (6 ounce) cans french's french fried onions

Recipe

  • 1 pre-heat the oven to 400 degrees.
  • 2 using the beaten egg, coat each chicken cutlet in egg.
  • 3 crush up the entire can of onion toppers into a plastic bag and one at a time, roll the chicken into the toppers. you will need to press firmly to make sure the onions stick.
  • 4 bake in the oven on a baking sheet for 20 minutes or until the chicken is no longer pink.

Bistro Turkey Sandwiches

  • 1 small red onion, thinly sliced
  • 4 teaspoons brown sugar, divided
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 cup dijon mustard
  • 1 tablespoon apple cider or 1 tablespoon unsweetened apple juice
  • 6 whole grain buns, split
  • 6 bibb lettuce or 6 boston lettuce leaves
  • 1 medium pear, peeled and thinly sliced
  • 1 lb cooked turkey breast, thinly sliced
  • 1/4 cup loosely packed basil leaves, chopped if you prefer
  • 6 tablespoons gorgonzola, crumbled

  • 1 teaspoon lemon pepper

  • 1/2 cup light cream (or milk with a bit more butter added)
  • chicken broth, plus pan juices to make one cup
  • 2 tablespoons flour
  • 2 tablespoons dijon mustard
  • 1/2 cup wine (or extra stock)

Recipe

  • 1 sprinkle the chicken breasts with the onion powder, lemon pepper and salt.
  • 2 saute the chicken in the butter for about 20 min, or till cooked through and tender. remove chicken to a platter and keep warm.
  • 3 measure the pan juices and enough chicken broth to make 1 cup liquid. return the stock mixture to the pan and add the wine.
  • 4 stir together the light cream and the flour till smooth. add to the broth, cook and stir till smooth, thickened and bubbly.
  • 5 stir in the dijon mustard , stir till smooth.
  • 6 return the chicken to the pan, or serve the sauce separately.

Dale's Marinade For Grilled Chicken

Recipe

  • 1 in a large bowl, combine cilantro, garlic, cumin, black pepper, teriyaki, and lime juice. add chicken, cover and marinate overnight.
  • 2 grill chicken and serve with teriyaki rice, over a salad, or with fajita fixings.

Asparagus With Bacon

Ingredients

  • Servings: 4
  • 4 slices bacon, diced
  • 1/4 cup red onion (chopped finely)
  • 1 tablespoon butter
  • 1 lb asparagus, trimmed, sliced in 2 to 3 inch inch lengths
  • 1 teaspoon dijon mustard
  • 1 1/2 tablespoons wine vinegar
  • salt and pepper, to taste

Recipe

  • 1 (optional) cook an additional 8 slices of bacon to wrap around asparagus into bundles (2 slices each bundle).
  • 2 cook bacon until nice and crispy; remove to paper towels to drain. (if wrapping into bundles, cook 8 slices of bacon so that bacon is cooked, but not crispy. crispy bacon is very difficult to wrap around the asparagus if it is too crispy).
  • 3 steam the asparagus for 4 รข€“ 6 minutes.
  • 4 remove some of the bacon grease from the pan, leaving two to three tablespoons. in a large fry pan or wok, add onion, butter, bacon grease and cook onion until soft. add asparagus to the pan and sauté over medium to low heat for about 4 minutes, turning asparagus every 15 seconds.
  • 5 put in a bowl and toss with the mustard and vinegar. add salt and pepper, to taste.
  • 6 (optional) split asparagus into 4 bundles and wrap with 2 slices of bacon.

Christmas Cake Parfaits

  • 2 cups fruitcake, finely chopped
  • 3 tablespoons dark rum (or to taste)
  • 1 quart vanilla ice cream, softened slightly
  • 1/2 cup heavy cream, well chilled
  • candied fruit, for garnish if desired (optional)

Recipe

  • 1 in a bowl, toss the fruitcake in the rum and let it stand for 10 minutes.
  • 2 in each of six 6-ounce parfait glasses, make layers of the softened ice cream and the fruitcake mixture, beginning with a layer of ice cream and ending with a layer of fruitcake.
  • 3 freeze the filled parfait glasses, covering loosely, for at least 30 minutes and up to 24 hours. (note: if freezing for longer than 2 hours, let the parfaits stand at room temperature for 5 to 10 minutes to soften slightly before serving.
  • 4 just before serving, in a chilled bowl, beat the cream until it just holds stiff peaks, transfer it to a pastry bag fitted with a decorative tip and pipe it onto the parfaits.
  • 5 garnish the parfaits with candied fruit, if desired.

Borinquen Jibarito Sandwich

Ingredients

  • 1 large green plantain, peeled and sliced lengthwise and in half (4 pieces)
  • oil (for deep frying)
  • 1 tablespoon butter
  • 2 teaspoons olive oil
  • 1 cup thinly sliced onion
  • 2 cloves garlic, smashed and minced
  • 1/4 teaspoon cumin
  • 1 -2 pinch cayenne or 1 -2 pinch dried chipotle powder, to taste
  • 6 ounces shaved shoulder steak (or other tender cut such as flank, or thinly sliced chicken breast meat)
  • salt & freshly ground black pepper, to taste
  • 4 slices american cheese
  • 1 tablespoon mayonnaise
  • romaine lettuce
  • thinly sliced tomatoes or roasted red pepper
  • 1 teaspoon melted butter
  • 1/4 teaspoon roasted minced garlic

Recipe

  • 1 (also, you will need 2 heavy cutting boards - rectangular ones work better with the shape of the plantain).
  • 2 heat oil, then fry the peeled and sliced plantain for 1 minute.
  • 3 remove plantain from oil, place on a heavy cutting board (if wooden, wrap board in plastic first, which will assist in the spreading of the softened plantain), top with another cutting board, and flatten the plantain between them.
  • 4 fry the now-flattened plantain in the oil again, until outside is golden and crispy; remove from oil, set aside on paper towels to blot oil, and keep warm.
  • 5 over medium high heat, melt 1 tablespoon butter and olive oil together, then sauté the onions until just becoming soft.
  • 6 add the garlic, cumin, and cayenne (to taste), stir well, then add the meat slices and sauté until browned; season to taste with salt and pepper.
  • 7 spread mayonnaise on bottom slice of flattened fried plantain, lay down 2 slices of american cheese, then the meat and onions. top with lettuce and thinly sliced tomato (or roasted red pepper), then the remaining plantain top.
  • 8 combine 1 teaspoon melted butter with 1/4 teaspoon roasted minced garlic, then brush the top plantain slice with the butter garlic mixture.
  • 9 repeat steps to make another sandwich.
  • 10 serve completed sandwiches with arroz con gandules (yellow rice with pigeon peas).
  • 11 jibaritos can also made with other combinations of roast lamb, or dark chicken meat, vegetables or ham - don't be afraid to experiment.
  • 12 i've made the sandwich using chicken and substituting roasted red pepper for the tomato, and the taste was phenominal!

Creamed Spinach Puree

  • 1/4 cup butter
  • 2 (10 ounce) packages frozen spinach, cooked,squeezed dry and finely chopped or pureed
  • 1/2 cup whipping cream
  • 2 tablespoons grated parmesan cheese
  • 1 pinch of grated nutmeg
  • salt & freshly ground black pepper

Recipe

  • 1 brown butter in medium saucepan over medium heat.
  • 2 mix in remaining ingredients except salt and pepper and heat through, stirring constantly.
  • 3 season to taste.

Chicken Cutlets With Tomato Saute

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs small chicken cutlets (8 to 12)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 1/2 pints cherry tomatoes (or grape)
  • 1/4 cup dry wine
  • 4 scallions, sliced
  • 2 tablespoons fresh tarragon leaves, chopped

Recipe

  • 1 season the chicken with salt and pepper.
  • 2 heat the oil in a large skillet over medium high heat. working in 2 batches, cook the chicken until browned and cooked through, 2 to 3 minutes per side, transfer to plate.
  • 3 add the tomatoes to the skillet and cook over medium-high heat, stirring occasionally until they begin to burst, 2 to 3 minutes.
  • 4 add the wine and simmer until the liquid is reduced by half, 2 to 3 minutes. stir in the scallions and tarragon and serve with the chicken.

Bistec Encebollado (steak And Onions)

Ingredients

  • 1/2 teaspoon salt
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon fresh oregano, minced (or you can use 1/2 tsp dried)
  • 1 large garlic clove, minced
  • 3 tablespoons olive oil, divided
  • 1 1/2 lbs top round steaks
  • 2 medium onions, sliced into 1/2 inch thick rounds
  • 1 teaspoon apple cider vinegar

Recipe

  • 1 in a small bowl, combine salt, pepper, oregano, garlic and one tablespoon of the olive oil. mix together to form paste and rub the paste on both sides of the steak.
  • 2 heat a large non-stick skillet over medium-high heat. add one tablespoon of olive oil. add the steaks and cook until browned, about 2 minutes per side. remove to a plate and set aside.
  • 3 add the last tablespoon of olive oil to same skillet and reduce heat to medium. add the sliced onion, stirring frequently to scrape up any browned bits. cook until onions are soft, about 10 minutes.
  • 4 stir in apple cider vinegar.
  • 5 slice steak into thin strips and return meat and any juices back to skillet with onions. stir to heat through. serve!

  • 2 add the onions and cook until soft.
  • 3 in a bowl combine steak sauce, worcestershire sauce and mustard.
  • 4 pour sauce over chicken and onions and cook until heated through.
  • 5 serve over rice.

Chicken Schniztel With Bacon

  • 1 teaspoon garlic-infused olive oil
  • 4 slices bacon
  • 16 ounces chicken escalopes, or boned and skinned breast halves
  • 1 cup wine

Recipe

  • 1 put the garlic oil in a skillet and add the bacon.
  • 2 fry till the baconรข€™s crisp and the pan is full of bacony juices, remove the bacon to a piece of foil, wrap it, and set it aside for a moment.
  • 3 fry the chicken for about 2 minutes a side, until there is no pinkness when you cut into a piece. make sure the panรข€™s hot so that the escalopes catch a little, turning beautifully bronze.
  • 4 remove the chicken to a serving plate and quickly crumble in the bacon youรข€™ve set aside, then pour the wine in and let everything bubble up, and pour over the chicken pieces.

Chicken Cutlets With Artichokes, Tomato And Mozzarella

Ingredients

  • Servings: 2
  • 2 boneless skinless chicken breast halves, halved horizontally and flattened to form 4 cutlets
  • salt and pepper
  • 1/4 cup flour, seasoned with salt and pepper
  • 2 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 1 small garlic clove, minced
  • 2 tablespoons dry wine or 2 tablespoons dry vermouth
  • 2 tablespoons fresh lemon juice
  • 4 slices of ripe fresh tomatoes, sliced 1/4-inch-thick
  • 1/2 cup sliced drained marinated artichoke hearts
  • 4 slices fresh mozzarella cheese, sliced 1/4-inch-thick
  • 1 tablespoon minced fresh parsley

Recipe

  • 1 sprinkle the chicken cutlets with salt and pepper to taste and dredge them in the flour, coating them thoroughly and shaking off the excess.
  • 2 in a heavy skillet heat 1 tablespoon of the butter and the oil over medium high heat, and in the fat sauté the cutlets in 2 batches for 1 minute on each side or until they are just cooked through. transfer them to a baking dish and tent with foil to keep warm.
  • 3 preheat the oven broiler.
  • 4 remove the skillet from the heat, add the garlic, and cook stirring over medium low heat for a few moments. add the wine and the lemon juice and simmer the mixture until it is reduced by half.
  • 5 remove the skillet from the heat, add the remaining tablespoon butter, and swirl the skillet until the butter is incorporated in the sauce.
  • 6 pour the sauce over the cutlets, and top the cutlets with the tomato, the artichoke hearts, and the mozzarella.
  • 7 broil the cutlets about 3 inches from the heat until the mozzarella is melted and begins to bubble.
  • 8 sprinkle with parsley and serve.

Dal Capsicum

Ingredients

  • 1 pinch asafetida powder
  • 2 tablespoons bengal gram dal, split (chana dal)
  • 2 -3 medium red capsicums
  • 4 -5 curry leaves
  • 1/2 teaspoon mustard seeds
  • 6 tablespoons oil
  • 1/2 cup split peas
  • 3 -4 red chilies, whole
  • salt, to taste

Recipe

  • 1 soak the toor dal (or split peas) and chana dal in two cups of water for half an hour. wash, halve, deseed and finely chop the capsicums. wash and pat dry the curry leaves.
  • 2 remove the stems from the whole red chillies. grind the soaked dals (or dal and split peas) along with the whole red chillies, asafoetida and add a little salt.
  • 3 in a pan heat two tablespoons of oil, add the chopped capsicum and sauté until the capsicum has softened. set aside.
  • 4 in a kadai heat the remaining four tablespoons of oil, add the mustard seeds and curry leaves.
  • 5 once they begin to crackle, add the ground dals (or dal and split peas) and stir. cook until the liquid has evaporated and the dals (or dal and split peas) have turned golden brown.
  • 6 add the sautéed capsicum, mix well and serve hot.

Cheesy Garlic Biscuts

  • 2 tablespoons sugar
  • 2 tablespoons baking powder
  • 1 1/2 cups milk

  • 1/4 teaspoon salt
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon dried parsley

Recipe

  • 1 mix all except milk.
  • 2 cut in milk to dough.
  • 3 shape into biscuits on greased sheet.
  • 4 mix and spread on biscuits.
  • 5 bake 375 for 10-12mins.

Bissap Rouge (hibiscus Punch)

Ingredients

  • Servings: 8
  • 8 cups water
  • 1 cup dried hibiscus flowers (also called roselle or sorrel)
  • 2/3 cup powdered sugar

Recipe

  • 1 combine water and hibiscus in a large nonaluminum dutch oven. cover and let stand 2 hours. bring to a boil.
  • 2 reduce heat and simmer, uncovered, 5 minutes. strain through a sieve, reserving punch; discard solids.
  • 3 add sugar, stirring until sugar dissolves; chill.

Creamed Spinach With Bacon And Bechamel Sauce

  • 1 lb fresh spinach (about 2 large bunches)
  • 3 -4 slices bacon, uncooked, finely chopped
  • 1 garlic clove, finely chopped
  • 1 medium onion, finely chopped
  • 1 pinch nutmeg
  • salt and pepper
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup whole milk

Recipe

  • 1 cut off the thick stems of the spinach and discard. clean the spinach by filling up your sink with water and soaking the spinach to loosen any sand or dirt. drain the spinach and then repeat soaking and draining.
  • 2 blanch the spinach in a pot of boiling water until the spinach is wilted, about 1-2 minute drain and rinse in cold water to stop the spinach from cooking further. squeeze to remove all the moisture possible. chop and set aside.
  • 3 heat a large skillet on med. high. add the chopped bacon and sauté until the bacon begins to render some fat. add the chopped onion and garlic. sauté until onions are translucent.
  • 4 make the béchamel sauce. melt butter in a small saucepan on med/low heat until it just starts to bubble. add the flour and cook, stirring until smooth, about 2 minute slowly add the milk, whisking continuously, cooking until thick.
  • 5 combine spinach, bacon and onion mix, and béchamel sauce into one pan. add nutmeg, salt and pepper to taste. bring to a simmer, remove from heat and serve.

  • 1 (10 ounce) package frozen chopped spinach
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup half-and-half
  • 1/2 cup grated parmesan cheese
  • 1/4 teaspoon freshly grated nutmeg

Recipe

  • 1 cook spinach according to package directions. drain and set aside.
  • 2 melt butter in a medium saucepan over medium heat until it bubbles.
  • 3 add the flour and cook, stirring constantly, until the flour starts to brown.
  • 4 add the half & half and blend well, using a wire whisk if necessary.
  • 5 cook, stirring constantly, until the mixture thickens enough to coat the back of a wooden spoon. reduce heat to simmer.
  • 6 add nutmeg and grated parmesan cheese. stir until cheese melts.
  • 7 stir in spinach.
  • 8 serve immediately.

Bean And Cheese Quesadilla

Ingredients

  • Servings: 4
  • 8 12 inch tortillas
  • 1 (16 ounce) can refried beans (rosarita)
  • 6 ounces monterey jack cheese
  • 6 ounces cheddar cheese, shredded and mixed together
  • 4 tablespoons oil
  • 4 tablespoons butter

Recipe

  • 1 divide each ingredient into four portions spread 1/4 beans over tortilla, add 1/4 cheese, top with second tortilla, in large skillet, heat together 1tbs oil and 1 tbs butter over med heat.
  • 2 place assembled quesadilla into pan.
  • 3 cook till bottom is browned then turn over and brown other side.
  • 4 place on large plate and cool 1-2 min.
  • 5 cut into eight wedges with scissors.
  • 6 repeat three more times.
  • 7 serve immediately.

  • 4 cups ice
  • 1/2 cup orange liqueur
  • 1 cup tequila

Ingredients

  • 1/4 cup non dairy margarine
  • 1/3 cup sugar or 1/3 cup sugar substitute

  • 1 egg

  • 1/3 cup flour
  • 3 cups half-and-half cream (use 3-1/2 cups for a thinner texture)
  • 1 -2 tablespoon fresh minced garlic (or to suit taste, i like lots!)
  • 1/8 teaspoon ground nutmeg
  • 1/2-1 teaspoon dried thyme (or to suit taste)
  • fresh ground black pepper
  • 1/2-3/4 cup grated parmesan cheese
  • 2 cups grated swiss cheese (swiss is best) or 2 cups cheddar cheese (swiss is best)

  • 1/3 cup golden raisin (optional)
  • salt & freshly ground black pepper
  • 1 1/2 teaspoons yellow curry powder (to taste)
  • 1 lb boneless skinless chicken breast
  • 1 cup sour cream
  • minced fresh cilantro (to garnish) or fresh parsley (to garnish)

Recipe

  • 1 put the oil in a large skillet over medium high heat. when hot, add the onions (and optional raisins), sprinkle with some salt and pepper, and cook, stirring occasionally, until translucent, about 5 minutes. turn the heat down to medium, sprinkle with half of the curry powder, and continue to cook a minute or two.

  • 1 package frozen chopped spinach (thawed) or 2 bunches fresh spinach
  • 1/2 large onion, chopped
  • 1 lb mushroom, sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon dried garlic or 2 cloves fresh diced garlic
  • 3 tablespoons sour cream
  • salt and pepper

  • 1 if using fresh spinach, unbundle and soak in a sink full of cold water.
