Creamed Spinach With Bacon & Onions

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 cup diced bacon
  • 1/2 cup minced onion
  • 3 lbs spinach, washed,dried
  • salt and pepper
  • 1 1/2 cups cream
  • freshly ground nutmeg

Recipe

  • 1 render the bacon in a dutch oven over moderately low heat until crisp.
  • 2 add the onion and saute until softened.
  • 3 add the spinach and cook, turning and stirring, until just wilted.
  • 4 season with salt and pepper.
  • 5 drain the excess liquid into a skillet.
  • 6 add the cream to the skillet, bring to a boil and reduce by half.
  • 7 season with nutmeg.
  • 8 pour over the spinach.
