Creamed Spinach With Bacon & Onions

Ingredients
- Servings: 6
- 1/2 cup diced bacon
- 1/2 cup minced onion
- 3 lbs spinach, washed,dried
- salt and pepper
- 1 1/2 cups cream
- freshly ground nutmeg
Recipe
- 1 render the bacon in a dutch oven over moderately low heat until crisp.
- 2 add the onion and saute until softened.
- 3 add the spinach and cook, turning and stirring, until just wilted.
- 4 season with salt and pepper.
- 5 drain the excess liquid into a skillet.
- 6 add the cream to the skillet, bring to a boil and reduce by half.
- 7 season with nutmeg.
- 8 pour over the spinach.
