Country Dijon Broccoli Soup

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1 (10 ounce) package frozen chopped broccoli
  • 2 1/2 cups chicken broth
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 tablespoons flour
  • 1/4 cup dijon mustard, grey poupon country
  • 1 cup heavy cream
  • salt and pepper, to taste

Recipe

  • 1 in medium saucepan, cook broccoli in broth until tender.
  • 2 in blender or processor, puree until smooth.
  • 3 in saucepan, melt butter.
  • 4 stir in flour.
  • 5 cook, stirring, 2 to 3 minutes.
  • 6 mix in puree, mustard and cream.
  • 7 heat to boiling.
  • 8 season to taste.
