Buttertart Muffins 1983

Ingredients

  • Servings: 12
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups golden raisins, seedless
  • 3/4 cup granulated sugar
  • 1/2 cup butter
  • 1/2 cup whole milk
  • 1/2 cup chopped fine walnuts
  • 2 beaten eggs
  • 1 teaspoon vanilla extract
  • 12 teaspoons lyles golden syrup, for dizzling after baking

Recipe

  • 1 in a saucepan over med.
  • 2 heat stir in the raisins, butter,, sugar,, eggs, milk, and vanilla.
  • 3 stir over the heat for 5 minutes.
  • 4 just until thick, and just coming to a boil.
  • 5 remove from heat and add in dry ingredients.
  • 6 add in nuts.
  • 7 just until blended.
  • 8 pour into 12 muffin cups.
  • 9 bake 18 minutes at 350 degrees.
  • 10 remove when done and drop 1 tsp of lyles golden syrup over the top of each while still hot.
  • 11 let cool in pan.
  • 12 remove from pan.
