Ingredients
- Servings: 12
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups golden raisins, seedless
- 3/4 cup granulated sugar
- 1/2 cup butter
- 1/2 cup whole milk
- 1/2 cup chopped fine walnuts
- 2 beaten eggs
- 1 teaspoon vanilla extract
- 12 teaspoons lyles golden syrup, for dizzling after baking
Recipe
- 1 in a saucepan over med.
- 2 heat stir in the raisins, butter,, sugar,, eggs, milk, and vanilla.
- 3 stir over the heat for 5 minutes.
- 4 just until thick, and just coming to a boil.
- 5 remove from heat and add in dry ingredients.
- 6 add in nuts.
- 7 just until blended.
- 8 pour into 12 muffin cups.
- 9 bake 18 minutes at 350 degrees.
- 10 remove when done and drop 1 tsp of lyles golden syrup over the top of each while still hot.
- 11 let cool in pan.
- 12 remove from pan.
