Abba's Whole Wheat Corn Muffins

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1/4 cup non dairy margarine
  • 1/3 cup sugar or 1/3 cup sugar substitute
  • 1/4 cup honey
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/4 cup semolina
  • 3/8 cup cornmeal
  • 1/4 teaspoon baking powder
  • 1/4 cup soymilk
  • 3/8 cup frozen corn

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 mix margarine, sugar, honey, egg, and salt into a large bowl.
  • 3 add flour, semolina, cornmeal, and baking powder and blend thoroughly.
  • 4 add soy milk while mixing.
  • 5 add corn to mixture and work into mixture. (do not mash corn, the whole kernel is baked into the muffin.).
  • 6 fill a muffin pan with 6 paper/foil muffin cups and fill 2/3 full with batter.
  • 7 bake for 20-25 minutes until muffins are light brown.
