Baked Cheesy Chicken Nuggets (no Bread Coating)

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/3 cup polenta (aka. cornmeal)
  • 1/3 cup finely grated parmesan cheese
  • 2 chicken breasts, flatten slightly and cut into chunks

Recipe

  • 1 preheat oven to 200°c.
  • 2 flatten the chicken slightly until it is the desired thickness of your nuggets--you can use a meat mallet or your rolling pin.
  • 3 cut the chicken into nugget sized chunks.
  • 4 combine the polenta and the parmesan in a bowl.
  • 5 dip the chicken pieces into the polenta mixture and ensure they are thoroughly coated.
  • 6 place the nuggets onto a paper lined baking tray and bake for 10 minutes, or until cooked and golden.
