Creamed Spinach

Ingredients

- 1 (10 ounce) package frozen chopped spinach
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1/2 cup half-and-half
- 1/2 cup grated parmesan cheese
- 1/4 teaspoon freshly grated nutmeg
Recipe
- 1 cook spinach according to package directions. drain and set aside.
- 2 melt butter in a medium saucepan over medium heat until it bubbles.
- 3 add the flour and cook, stirring constantly, until the flour starts to brown.
- 4 add the half & half and blend well, using a wire whisk if necessary.
- 5 cook, stirring constantly, until the mixture thickens enough to coat the back of a wooden spoon. reduce heat to simmer.
- 6 add nutmeg and grated parmesan cheese. stir until cheese melts.
- 7 stir in spinach.
- 8 serve immediately.
