Bran Muffins

Ingredients
- 1 cup whole wheat flour (or 1/2 white and 1/2 whole wheat)
- 1 cup bran flakes
- 1/2 cup raisins (or other dried fruit)
- 1/2 cup chopped nuts (optional)
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 3 tablespoons safflower oil
- 2 tablespoons honey
- 2 tablespoons molasses
- 1 teaspoon vinegar
Recipe
- 1 preheat oven to 425 degrees f.
- 2 prepare muffin tins by lining with paper liners or spray with cooking spray.
- 3 combine first 6 ingredients (flour- salt) in a large bowl stirring with a wooden spoon.
- 4 in a small bowl combine remaining ingredients (egg- vinegar). set aside.
- 5 make a well in the center of the dry ingredients and add egg mixture. stir with wooden spoon to combine.
- 6 spoon mixture into prepared muffin tin.
- 7 bake for 15-20 minutes or until done.
