Bob's Collard Greens

Ingredients
- 1 bunch collard greens (big bunch)
- 3 tablespoons butter
- 2 garlic cloves, minced
- 1 teaspoon italian seasoning
- 1 tablespoon sugar
- 1/4 teaspoon vinegar
- 1/2 teaspoon red pepper flakes
- 1 (14 ounce) can stewed tomatoes
- 1/4 teaspoon fresh ground pepper
Recipe
- 1 chop the collard greens, stems and all, into bite sized pieces.
- 2 bring a big pot of salted water to a boil. pour in the collards and boil for 18 to 20 minutes.
- 3 meanwhile prepare the sauce.
- 4 melt butter in a saucepan over medium heat.
- 5 add the garlic and saute for 2 minutes.
- 6 add the rest of the ingredients and bring to a simmer.
- 7 once the greens are done drain them and return them to the pot.
- 8 pour the sauce over them and keep warm until you're ready to serve.
