Bob's Collard Greens

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 bunch collard greens (big bunch)
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1 teaspoon italian seasoning
  • 1 tablespoon sugar
  • 1/4 teaspoon vinegar
  • 1/2 teaspoon red pepper flakes
  • 1 (14 ounce) can stewed tomatoes
  • 1/4 teaspoon fresh ground pepper

Recipe

  • 1 chop the collard greens, stems and all, into bite sized pieces.
  • 2 bring a big pot of salted water to a boil. pour in the collards and boil for 18 to 20 minutes.
  • 3 meanwhile prepare the sauce.
  • 4 melt butter in a saucepan over medium heat.
  • 5 add the garlic and saute for 2 minutes.
  • 6 add the rest of the ingredients and bring to a simmer.
  • 7 once the greens are done drain them and return them to the pot.
  • 8 pour the sauce over them and keep warm until you're ready to serve.
