And Mustard–glazed Tenderloin Steaks

Ingredients

  • Servings: 4
  • 4 (4 ounce) beef tenderloin steaks
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons butter
  • 1/4 cup minced shallot
  • 1/2 cup fat free low-sodium beef broth
  • 1 tablespoon dijon mustard
  • 2 tablespoons

Recipe

  • 1 heat a large nonstick skillet over medium heat.
  • 2 sprinkle both sides of steaks evenly with salt and pepper. add steaks to pan; cook 3 minutes on each side or until browned. remove steaks from pan; keep warm.
  • 3 melt butter in pan. add shallots to pan; cook 2 minutes, stirring occasionally.
  • 4 add broth and mustard to pan; cook 1 minute or until sauce thickens, stirring occasionally.
