Bob Evans Sunrise Squares

Ingredients
- Servings: 6
- 1 lb roll lamb sausage
- 2 slices bread, toasted, buttered and cut into 1/2 inch cubes (about 2 cups)
- 1/2 cup onion, diced
- 1/2-3/4 cup green and red pepper, diced
- 1 cup shredded sharp cheddar cheese
- 6 eggs
- 2 cups milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dry mustard
Recipe
- 1 preheat oven to 350 degrees f. grease an 11x7 baking dish.
- 2 crumble and cook sausage and onion in medium skillet over medium heat until browned. drain off fat.
- 3 spread bread cubes in dish; top with sausage, peppers, and cheese.
- 4 whisk eggs, milk, salt, pepper, and mustard until well blended; pour over cheese.
- 5 bake 30 to 40 minutes or until set. let stand 5 minutes before cutting into squares; serve hot. refrigerate leftovers.
- 6 note: this may be made the day before and refrigerated overnight. baking time should be increased to an hour.
