Bob Evans Sunrise Squares

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 lb roll lamb sausage
  • 2 slices bread, toasted, buttered and cut into 1/2 inch cubes (about 2 cups)
  • 1/2 cup onion, diced
  • 1/2-3/4 cup green and red pepper, diced
  • 1 cup shredded sharp cheddar cheese
  • 6 eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard

Recipe

  • 1 preheat oven to 350 degrees f. grease an 11x7 baking dish.
  • 2 crumble and cook sausage and onion in medium skillet over medium heat until browned. drain off fat.
  • 3 spread bread cubes in dish; top with sausage, peppers, and cheese.
  • 4 whisk eggs, milk, salt, pepper, and mustard until well blended; pour over cheese.
  • 5 bake 30 to 40 minutes or until set. let stand 5 minutes before cutting into squares; serve hot. refrigerate leftovers.
  • 6 note: this may be made the day before and refrigerated overnight. baking time should be increased to an hour.
