Bob's Seafood Scampi Florentine

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1/4 cup olive oil
  • 1/2 cup butter or 1/2 cup margarine
  • 3 tablespoons chopped fresh garlic
  • 2 tablespoons lemon juice
  • 1/4 cup white
  • 1/4 cup chopped fresh parsley
  • 1/4 teaspoon italian seasoning
  • 8 ounces frozen chopped spinach
  • 16 ounces tilapia fillets (4 - 4 ounce pieces)
  • 24 pieces cooked shrimp (41-50 count)
  • pecorino romano cheese

Recipe

  • 1 in a large skillet on med heat sautee the garlic in the oil and butter until soft and fragrant.
  • 2 add the lemon juice, white , parsley, italian seasoning and chopped spinach until heated throughout.
  • 3 add the tilapia and shrimp and cook only until fish is white and flaky.
  • 4 use spatula to turn fish and shrimp over once while cooking.
  • 5 serve as is or over rice.
  • 6 sprinkle with romano.
  • 7 enjoy!
