Cranberries And Port Wine Condiment

Ingredients

  • Servings: 6
  • 12 ounces fresh cranberries
  • 1/2 cup sugar
  • 1 cup port wine
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons slivered crystallized ginger

Recipe

  • 1 wash cranberries and place in a pot with the sugar, port and cinnamon.
  • 2 bring to a boil over high heat.
  • 3 reduce heat and boil gently, uncovered, until berries begin to pop (about 5 minutes).
  • 4 stir in the slivered ginger.
  • 5 remove from heat and chill overnight.
  • 6 keeps in the refrigerator for about one week (if there is any leftover).
