Chicken In Lemon & Garlic

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 4 chicken breasts, boneless skinless
  • 5 tablespoons olive oil
  • 1 onion, finely chopped
  • 6 garlic cloves, finely chopped
  • 4 tablespoons parsley, chopped finely
  • 2 lemons
  • salt and pepper

Recipe

  • 1 slice the chicken breasts widthwise into very thin slices.
  • 2 heat the olive oil in large skillet.
  • 3 add the onion and cook until softened but not browned.
  • 4 add the garlic and cook for an additional 30 seconds.
  • 5 add the sliced chicken to the skillet and cook gently for 5 - 10 minutes until all are lightly browned and the chicken is tender.
  • 6 add grated lemon rind and the juice of 1 lemon and let it bubble.
  • 7 remove the skillet from the heat, stir in the parsley and season to taste with salt and pepper.
  • 8 transfer the chicken to a warm platter. sprinkle some more lemon rind and serve with lemon wedges for squeezing over the chicken.
  • 9 serve with crusty bread for mopping up the lemon and garlic juices.
