Chicken In Lemon & Garlic

Ingredients
- Servings: 6
- 4 chicken breasts, boneless skinless
- 5 tablespoons olive oil
- 1 onion, finely chopped
- 6 garlic cloves, finely chopped
- 4 tablespoons parsley, chopped finely
- 2 lemons
- salt and pepper
Recipe
- 1 slice the chicken breasts widthwise into very thin slices.
- 2 heat the olive oil in large skillet.
- 3 add the onion and cook until softened but not browned.
- 4 add the garlic and cook for an additional 30 seconds.
- 5 add the sliced chicken to the skillet and cook gently for 5 - 10 minutes until all are lightly browned and the chicken is tender.
- 6 add grated lemon rind and the juice of 1 lemon and let it bubble.
- 7 remove the skillet from the heat, stir in the parsley and season to taste with salt and pepper.
- 8 transfer the chicken to a warm platter. sprinkle some more lemon rind and serve with lemon wedges for squeezing over the chicken.
- 9 serve with crusty bread for mopping up the lemon and garlic juices.
