Creamy Mushroom & Carrot Side

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 500 g fresh mushrooms or 500 g mixed mushrooms
  • 8 baby carrots
  • 2 teaspoons fresh chives
  • 300 g single cream
  • 20 g butter
  • salt
  • pepper

Recipe

  • 1 slice your carrots into batons and put on the boil to cook.
  • 2 slice your mushrooms (you can use any type or a mixture).
  • 3 finely chop your chives.
  • 4 add the butter to a frying pan and once melted add the mushrooms, chives, salt and pepper and saute lightly for about 2-3 minutes.
  • 5 add half the tub of cream and stir for about 2 more minutes.
  • 6 add the other half of the tub of cream and stir again for 2 minutes.
  • 7 take the carrots off the boil, drain and add the cream and mushroom mixture to the carrot pan.
  • 8 mix and serve topped with parsley.
