Cracked-wheat Apple Chicken Salad

Ingredients

  • Servings: 6
  • 3 cups water
  • 1 1/2 cups cracked bulgur wheat
  • 2 apples, cut up
  • 2 tablespoons lemon juice
  • 6 tablespoons parsley, chopped
  • 4 tablespoons mint leaves, chopped
  • 1/2 cup walnuts
  • 1 teaspoon salt
  • pepper, to taste
  • 2 cups chicken breasts
  • 1/4 cup scallion, sliced
  • 1/4 cup lemon juice
  • 3 tablespoons olive oil

Recipe

  • 1 boil water. pour over bulgur. let stand for 45 minutes. press out excess water. let cool.
  • 2 pour 2t lemon juice over cut-up apples. tart, crisp apples like braeburn are best.
  • 3 chop and toast walnuts at 325. let cool.
  • 4 cook chicken breasts, let cool, cut into cubes. poaching works well.
  • 5 mix 1/4 cup lemon juice and 3t olive oil for dressing.
  • 6 combine all ingredients and mix well. chill. tastes best after sitting several hours. store in refrigerator.
