Cracked-wheat Apple Chicken Salad

Ingredients
- Servings: 6
- 3 cups water
- 1 1/2 cups cracked bulgur wheat
- 2 apples, cut up
- 2 tablespoons lemon juice
- 6 tablespoons parsley, chopped
- 4 tablespoons mint leaves, chopped
- 1/2 cup walnuts
- 1 teaspoon salt
- pepper, to taste
- 2 cups chicken breasts
- 1/4 cup scallion, sliced
- 1/4 cup lemon juice
- 3 tablespoons olive oil
Recipe
- 1 boil water. pour over bulgur. let stand for 45 minutes. press out excess water. let cool.
- 2 pour 2t lemon juice over cut-up apples. tart, crisp apples like braeburn are best.
- 3 chop and toast walnuts at 325. let cool.
- 4 cook chicken breasts, let cool, cut into cubes. poaching works well.
- 5 mix 1/4 cup lemon juice and 3t olive oil for dressing.
- 6 combine all ingredients and mix well. chill. tastes best after sitting several hours. store in refrigerator.
