Breakfast On The Go Panini

Ingredients

- 4 slices canadian bacon
- 2 teaspoons butter
- 2 eggs
- salt
- fresh ground black pepper
- 2 english muffins, split
- 1 tablespoon butter, melted
- 2 ounces cheddar cheese, sliced
Recipe
- 1 preheat panini grill to high.
- 2 arrange bacon on bottom grill plate of panini grill, close the top plate and grill until crispy, 1-2 minutes.
- 3 remove and set aside; wipe grill plates clean.
- 4 in a nonstick skillet, melt 2 t butter over medium heat.
- 5 crack eggs into the pan and cook until whites are set but yolks are still runny.
- 6 season with salt and pepper.
- 7 flip eggs with a rubber spatula and cook until yolks are set; remove from heat.
- 8 place muffins, cut side down on a work surface and brush crusts with melted butter.
- 9 turn muffins over and, on bottom half of each muffin, evenly layer with bacon, cheese, and egg.
- 10 cover with top halves and press gently to pack.
- 11 place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
- 12 serve immediately.
