Breakfast On The Go Panini

Total Time: 24 mins Preparation Time: 20 mins Cook Time: 4 mins

Ingredients

  • Servings: 2
  • 4 slices canadian bacon
  • 2 teaspoons butter
  • 2 eggs
  • salt
  • fresh ground black pepper
  • 2 english muffins, split
  • 1 tablespoon butter, melted
  • 2 ounces cheddar cheese, sliced

Recipe

  • 1 preheat panini grill to high.
  • 2 arrange bacon on bottom grill plate of panini grill, close the top plate and grill until crispy, 1-2 minutes.
  • 3 remove and set aside; wipe grill plates clean.
  • 4 in a nonstick skillet, melt 2 t butter over medium heat.
  • 5 crack eggs into the pan and cook until whites are set but yolks are still runny.
  • 6 season with salt and pepper.
  • 7 flip eggs with a rubber spatula and cook until yolks are set; remove from heat.
  • 8 place muffins, cut side down on a work surface and brush crusts with melted butter.
  • 9 turn muffins over and, on bottom half of each muffin, evenly layer with bacon, cheese, and egg.
  • 10 cover with top halves and press gently to pack.
  • 11 place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
  • 12 serve immediately.
