Chicken Marengo

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 15
  • 9 lbs chicken, quartered (i'd just buy pieces)
  • 1 teaspoon coarse black pepper
  • 1 cup flour
  • 2 teaspoons salt
  • 1/3 cup cooking oil
  • 2 cloves garlic
  • 4 (3 ounce) cans sliced mushrooms, , drained or 1 lb fresh, sliced mushroom
  • 4 (16 ounce) cans tomatoes
  • 2 cups dry wine

Recipe

  • 1 rub chicken with pepper.
  • 2 dredge in flour and season with salt.
  • 3 heat cooker, add oil and garlic.
  • 4 brown chicken.
  • 5 remove garlic.
  • 6 add mushrooms, tomatoes and 1 cup wine.
  • 7 close cover securely.
  • 8 place pressure regulator on vent pipe and cook 10 minutes at 15 pounds pressure.
  • 9 let pressure drop of its own accord.
  • 10 remove chicken from canner.
  • 11 add remaining wine and simmer-thicken if desired.
