Chicken Marsala With Mushrooms

Ingredients
- 4 boneless chicken breasts
- salt
- pepper
- 1/4 cup flour
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 shallots
- 1/2 lb sliced mushrooms
- 1/2 cup dry marsala wine
- 1/4 cup chicken stock
- 2 tablespoons chopped fresh parsley
Recipe
- 1 season chicken breasts with salt and pepper.
- 2 place flour in a shallow bowl-dredge chicken pieces
- 3 shake off excess flour.
- 4 heat 1 tablespoon of butter in a skillet over medium high heat until it starts to turn brown.
- 5 add olive oil and stir.
- 6 add chicken and cook 3 minutes on each side.
- 7 lower heat to medium and remove chicken.
- 8 add the other tablespoon of butter to pan with the thinly sliced shallots.
- 9 saute 2 minutes and add mushrooms.
- 10 raise heat to high and saute until mushrooms are lightly brown and softened.
- 11 pour in marsala wine and let boil for 30 seconds.
- 12 add chicken stock place chicken back in pan and cook additional 3-4 minutes.
- 13 add chopped parsley and season before serving.
