Chicken Marsala With Mushrooms

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 4 boneless chicken breasts
  • salt
  • pepper
  • 1/4 cup flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 shallots
  • 1/2 lb sliced mushrooms
  • 1/2 cup dry marsala wine
  • 1/4 cup chicken stock
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 season chicken breasts with salt and pepper.
  • 2 place flour in a shallow bowl-dredge chicken pieces
  • 3 shake off excess flour.
  • 4 heat 1 tablespoon of butter in a skillet over medium high heat until it starts to turn brown.
  • 5 add olive oil and stir.
  • 6 add chicken and cook 3 minutes on each side.
  • 7 lower heat to medium and remove chicken.
  • 8 add the other tablespoon of butter to pan with the thinly sliced shallots.
  • 9 saute 2 minutes and add mushrooms.
  • 10 raise heat to high and saute until mushrooms are lightly brown and softened.
  • 11 pour in marsala wine and let boil for 30 seconds.
  • 12 add chicken stock place chicken back in pan and cook additional 3-4 minutes.
  • 13 add chopped parsley and season before serving.
