Cast Iron Grilled Chuck Eye (poor Mans Rib-eye) Steaks W/spicy R

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/2 cup chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon dried coriander
  • 1 teaspoon cayenne pepper
  • 2 teaspoons dry mustard
  • 2 teaspoons dried oregano
  • 1 tablespoon salt
  • 1 teaspoon ground black pepper
  • 4 chuck eye steak (1/2 - 3/4 inch thick)
  • olive oil

Recipe

  • 1 prepare the rub by combining all ingredients.
  • 2 preheat a cast iron pan over high heat, and grill (or oven) to 425.
  • 3 rub each steak on one side with the rub. brush over the rub with a light coat of olive oil.
  • 4 cook the steak, rub side down, until 'blackened', about 5-7 minutes.
  • 5 flip the steaks over and continue to cook either on the grill or in the oven, until medium rare (or desired doneness), approximately 8 to 10 minutes for a thicker steak.
  • 6 remove from heat and let rest for 5 minutes before serving.
