Chicken Salad Dijon With Grapes And Apples

Ingredients
- Servings: 4
- 1 lb chicken breast, boneless and skinless (fat removed)
- 3 teaspoons extra virgin olive oil, divided
- salt
- pepper
- 3 tablespoons nonfat pain yogurt
- 3 tablespoons dijon mustard
- 1/3 cup chopped celery
- 1/3 cup seedless black grapes (cut in half)
- 1/3 cup chopped red apple
- lettuce leaf (garnish) (optional)
Recipe
- 1 preheat grill to high heat.
- 2 rub chix on all sides with 1 tsp olive oil.
- 3 season to taste with salt and pepper.
- 4 grill on high heat for 3-5 minutes per side, or until the chix is no longer pink inside.
- 5 let the chix cool, then cut into bite-sized cubes.
- 6 whisk together the remaining 2 tsp evoo (in a large bowl), yogurt and mustard.
- 7 add chix, celery, grapes and apple.
- 8 gently toss the mixture well to combine.
- 9 season to taste with salt and pepper.
- 10 garnish with lettuce leaves, if desired.
