Chicken Salad Dijon With Grapes And Apples

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb chicken breast, boneless and skinless (fat removed)
  • 3 teaspoons extra virgin olive oil, divided
  • salt
  • pepper
  • 3 tablespoons nonfat pain yogurt
  • 3 tablespoons dijon mustard
  • 1/3 cup chopped celery
  • 1/3 cup seedless black grapes (cut in half)
  • 1/3 cup chopped red apple
  • lettuce leaf (garnish) (optional)

Recipe

  • 1 preheat grill to high heat.
  • 2 rub chix on all sides with 1 tsp olive oil.
  • 3 season to taste with salt and pepper.
  • 4 grill on high heat for 3-5 minutes per side, or until the chix is no longer pink inside.
  • 5 let the chix cool, then cut into bite-sized cubes.
  • 6 whisk together the remaining 2 tsp evoo (in a large bowl), yogurt and mustard.
  • 7 add chix, celery, grapes and apple.
  • 8 gently toss the mixture well to combine.
  • 9 season to taste with salt and pepper.
  • 10 garnish with lettuce leaves, if desired.
