Brussels Sprouts With Bacon, Almonds And Cream

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 10 ounces brussels sprouts
  • 1/2 ounce butter
  • 1 tablespoon olive oil
  • 3 1/2 ounces smoked bacon, diced
  • 1 tablespoon sliced almonds
  • 7 tablespoons heavy cream
  • 1 lemon, juice and zest of
  • salt and pepper, to taste

Recipe

  • 1 trim the sprouts and drop into boiling water. simmer until nearly cooked and then drain.
  • 2 heat the butter and oil in a large pan. add the bacon and almonds, and sauté until brown.
  • 3 add the sprouts and cook for a further 2-3 minutes, stirring.
  • 4 allow to cool for a few minutes and then add the cream and lemon zest.
  • 5 return to the heat and cook for 4 minutes until the cream has reduced.
  • 6 season with salt and pepper and add a dash of lemon juice. serve immediately.
