Blueberry Lemon Scones

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 5 tablespoons unsalted butter
  • 3/4 cup buttermilk (approximately)
  • 2 teaspoons lemon peel, grated
  • 1/2 cup dried blueberries
  • 2 tablespoons buttermilk
  • 1/8 cup sugar

Recipe

  • 1 preheat oven to 450 degrees fahrenheit.
  • 2 combine the flour, sugar, salt, baking powder and baking soda in a large bowl and mix thoroughly.
  • 3 cut in the butter until the mixture resembles coarse crumbs.
  • 4 add just enough buttermilk to form a soft dough.
  • 5 stir in lemon peel and blueberries.
  • 6 turn out onto a floured board and roll out to 1/2 inch thick.
  • 7 cut the dough into 1 1/2 inch rounds.
  • 8 place on an ungreased baking sheet.
  • 9 brush the top of each scone with buttermilk and sprinkle with granulated sugar.
  • 10 bake for 10 to 12 minutes, or until golden brown.
