Blueberry Breakfast Biscuits - 1 Point

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 cups oatmeal
  • 3 tablespoons splenda sugar substitute
  • 1 tablespoon baking powder
  • 2 tablespoons unsalted butter
  • 1 cup buttermilk
  • 1 1/2 cups frozen blueberries

Recipe

  • 1 preheat oven to 400.
  • 2 grind the oatmeal into a flour using your food processor.
  • 3 combine the oatmeal, splenda and baking powder.
  • 4 cut in butter with a pastry cutter until it resembles a course meal.
  • 5 stir in buttermilk.
  • 6 fold in blueberries.
  • 7 place mixture into 13 mounds on a parchment lined baking pan.
  • 8 bake 20 to 25 minutes.
  • 9 i like to serve with a little wild honey (counting the points of course).
