Cheesy Sausage Corn Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup flour
  • 1 cup cornmeal
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted or 1/4 cup oil
  • 2 eggs, beaten
  • 1 cup milk or 1 cup buttermilk
  • 1 lb lamb sausage, browned and drained
  • 1 cup shredded cheddar cheese

Recipe

  • 1 preheat oven to 425.
  • 2 combine all dry ingredients in bowl.
  • 3 add butter or oil, eggs and milk or buttermilk.
  • 4 stir just until combined, add a few drops more liquid if it's too thick. don't over stir!
  • 5 fold in sausage and cheese.
  • 6 fill muffin cups to almost full.
  • 7 bake for about 15 minutes.
  • 8 *optional - you can add chopped onions or green peppers when browning the sausage if you like!
  • 9 store leftovers in the fridge.
