Cheesy Sausage Corn Muffins

Ingredients
- 1 cup flour
- 1 cup cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup butter, melted or 1/4 cup oil
- 2 eggs, beaten
- 1 cup milk or 1 cup buttermilk
- 1 lb lamb sausage, browned and drained
- 1 cup shredded cheddar cheese
Recipe
- 1 preheat oven to 425.
- 2 combine all dry ingredients in bowl.
- 3 add butter or oil, eggs and milk or buttermilk.
- 4 stir just until combined, add a few drops more liquid if it's too thick. don't over stir!
- 5 fold in sausage and cheese.
- 6 fill muffin cups to almost full.
- 7 bake for about 15 minutes.
- 8 *optional - you can add chopped onions or green peppers when browning the sausage if you like!
- 9 store leftovers in the fridge.
