Creamy Spinach And Carrot Soup

Ingredients

- 3 tablespoons butter
- 1 cup onion, chopped
- 2 tablespoons all-purpose flour
- 1 cup half-and-half
- 10 3/4 ounces chicken broth
- 1 cup carrot, shredded
- 10 ounces frozen chopped spinach, thawed and drained
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- nutmeg
Recipe
- 1 in 2 quart saucepan melt butter, add onions.
- 2 cook over medium heat, stirring occasionally until onions are tender, 5-6 minutes.
- 3 stir in flour until smooth and bubbly, 1 minute.
- 4 stir in half and half and chicken broth.
- 5 add remaining ingredients.
- 6 continue cooking over low heat stirring occasionally until soup is heated through, 12-15 minutes.
