Creamy Spinach And Carrot Soup

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 3 tablespoons butter
  • 1 cup onion, chopped
  • 2 tablespoons all-purpose flour
  • 1 cup half-and-half
  • 10 3/4 ounces chicken broth
  • 1 cup carrot, shredded
  • 10 ounces frozen chopped spinach, thawed and drained
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • nutmeg

Recipe

  • 1 in 2 quart saucepan melt butter, add onions.
  • 2 cook over medium heat, stirring occasionally until onions are tender, 5-6 minutes.
  • 3 stir in flour until smooth and bubbly, 1 minute.
  • 4 stir in half and half and chicken broth.
  • 5 add remaining ingredients.
  • 6 continue cooking over low heat stirring occasionally until soup is heated through, 12-15 minutes.
