Corn-bacon Relish

Ingredients

- 2 cups frozen corn, thawed
- 1/4 cup maple syrup
- 4 slices bacon, finely diced
- 1 medium sweet onion, finely diced
- salt
- fresh ground black pepper
Recipe
- 1 in a sauté pan, sauté corn and maple syrup until caramelized; set aside in a bowl.
- 2 in same skillet, add bacon and cook until almost crisp, drain fat, add onion and cook until translucent.
- 3 add corn mixture back to pan and cook through for 3 more minutes.
- 4 serve.
