Corn-bacon Relish

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups frozen corn, thawed
  • 1/4 cup maple syrup
  • 4 slices bacon, finely diced
  • 1 medium sweet onion, finely diced
  • salt
  • fresh ground black pepper

Recipe

  • 1 in a sauté pan, sauté corn and maple syrup until caramelized; set aside in a bowl.
  • 2 in same skillet, add bacon and cook until almost crisp, drain fat, add onion and cook until translucent.
  • 3 add corn mixture back to pan and cook through for 3 more minutes.
  • 4 serve.
