Crab Chowder With Snow Peas

Ingredients
- Servings: 4
- 2 cups clam juice
- 2 1/2 cups water
- 1/2 cup long grain rice
- 2 scallions, sliced
- 1 tablespoon minced gingerroot
- 2 (4 ounce) cans crabmeat
- 2 cups snow peas, halved crosswise
- 1 tablespoon dry sherry
- 1/2 cup milk
- 2 cups torn sorrel
- salt and pepper
Recipe
- 1 heat clam juice and water to boiling in a large saucepan. stir in rice, scallions and gingerroot; reduce heat and simmer, covered, until the rice is tender; about 20 minutes.
- 2 stir in crabmeat and snow peas; simmer for 1 minute.
- 3 stir in sherry, milk and sorrel.
- 4 season to taste with salt and pepper.
