Crab Chowder With Snow Peas

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 2 cups clam juice
  • 2 1/2 cups water
  • 1/2 cup long grain rice
  • 2 scallions, sliced
  • 1 tablespoon minced gingerroot
  • 2 (4 ounce) cans crabmeat
  • 2 cups snow peas, halved crosswise
  • 1 tablespoon dry sherry
  • 1/2 cup milk
  • 2 cups torn sorrel
  • salt and pepper

Recipe

  • 1 heat clam juice and water to boiling in a large saucepan. stir in rice, scallions and gingerroot; reduce heat and simmer, covered, until the rice is tender; about 20 minutes.
  • 2 stir in crabmeat and snow peas; simmer for 1 minute.
  • 3 stir in sherry, milk and sorrel.
  • 4 season to taste with salt and pepper.
