California Chicken And Vegetables

Ingredients

  • Servings: 4
  • 4 (1/4 lb) boneless skinless chicken breast half
  • 3 cups frozen mixed vegetables, thawed, drained (broccoli, red peppers and carrots)
  • 1/4 cup pesto sauce
  • 1/4 cup water
  • 1/2 cup shredded 2% mozzarella cheese

Recipe

  • 1 heat large skillet sprayed with cooking spray on medium-high heat. add chicken; cover. cook 5 minute on each side or until lightly browned on both sides.
  • 2 add vegetables, pesto and water. bring to boil. cook on medium heat 6 to 8 minute or until chicken is done (165°f), stirring occasionally.
  • 3 sprinkle with cheese; cover. remove from heat; let stand 5 minute.
