Brown Rice, Basil And Gruyere Garden Stuffing

Ingredients
- 2 1/2 cups long grain brown rice (1 lb)
- 4 tablespoons unsalted butter
- 1 large onion, chopped
- 2 medium zucchini, halved, lengthwise and cut into 1/2-inch slices
- 2 medium carrots, sliced 1/4 -inch thick
- 2 medium celery ribs, 1/4 inch thick
- 1 medium red bell pepper, chopped
- 1/2 lb fresh mushrooms, sliced
- 2 garlic cloves, minced
- 2 cups gruyere cheese or 2 cups swiss cheese
- 1/2 cup fresh basil, chopped
- 1 1/2 teaspoons salt
- 1/2 teaspoon fresh ground pepper
- 1/2 cup turkey (optional) or 1/2 cup chicken broth (optional)
