Banana Coconut Rolls

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 4 bananas, firm all-yellow
  • 2 tablespoons butter, melted
  • 2 tablespoons lemon juice (lime juice works too)
  • 1/2 cup unsweetened dried shredded coconut

Recipe

  • 1 peel bananas and cut crosswise into halves.
  • 2 place into a well-greased baking dish.
  • 3 brush thoroughly with butter or margarine, then with lemon or lime juice.
  • 4 sprinkle bananas with coconut.
  • 5 bake in a moderate oven (375 degrees) 15 to 20 minutes, or until coconut is browned and bananas are tender -- easily pierced with a fork.
  • 6 garnish with sliced pineapple, orange slices and cherries, if desired. serve hot.
