Banana Coconut Rolls

Ingredients
- 4 bananas, firm all-yellow
- 2 tablespoons butter, melted
- 2 tablespoons lemon juice (lime juice works too)
- 1/2 cup unsweetened dried shredded coconut
Recipe
- 1 peel bananas and cut crosswise into halves.
- 2 place into a well-greased baking dish.
- 3 brush thoroughly with butter or margarine, then with lemon or lime juice.
- 4 sprinkle bananas with coconut.
- 5 bake in a moderate oven (375 degrees) 15 to 20 minutes, or until coconut is browned and bananas are tender -- easily pierced with a fork.
- 6 garnish with sliced pineapple, orange slices and cherries, if desired. serve hot.
