Curried Noodles With Lamb

Ingredients
- Servings: 6
- 250 g dried rice noodles
- 1 large onion
- 2 tablespoons oil
- 3 teaspoons mild curry powder
- 1 teaspoon salt
- 1 cup frozen peas
- 1 cup coconut milk
- 3 teaspoons soy sauce
- 250 g cooked lamb (bbq or roast, thinly sliced)
Recipe
- 1 soak rice noodles in a bowl of hot water for 20 minutes. drain well.
- 2 cut onion into 1/4 inch strips.
- 3 heat the oil in a wok, add the onion and cook on high heat until onion is soft. (1-2 min).
- 4 add curry powder, salt and noodles. mix well.
- 5 add the peas, coconut milk and soy sauce, toss to combine. reduce heat, cover and cook on low for 3 minutes.
- 6 stir in lamb and heat for another 1-2 minute (until lamb is warm).
