Curried Cream Of Pea Soup

Ingredients
- Servings: 4
- 1 cup frozen peas
- 1 onion, sliced
- 1 stalk celery, sliced
- 1 medium potato, sliced
- 1 garlic clove, peeled
- 1 teaspoon salt
- 2 1/2 teaspoons curry powder
- 2 cups chicken stock, heated
- 1 cup light cream, heated
Recipe
- 1 place the prepared vegetables, garlic, salt, curry powder and one cup of the the stock in a saucepan.
- 2 bring to a boil.
- 3 cover and simmer for 15 minutes.
- 4 transfer to a processor.
- 5 blend well.
- 6 return the mixture to a saucepan.
- 7 reheat.
- 8 add the remaining stock and cream.
- 9 reheat.
- 10 can be served cold with a dollop of whipped cream, chives and parsley.
