Curried Cream Of Pea Soup

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup frozen peas
  • 1 onion, sliced
  • 1 stalk celery, sliced
  • 1 medium potato, sliced
  • 1 garlic clove, peeled
  • 1 teaspoon salt
  • 2 1/2 teaspoons curry powder
  • 2 cups chicken stock, heated
  • 1 cup light cream, heated

Recipe

  • 1 place the prepared vegetables, garlic, salt, curry powder and one cup of the the stock in a saucepan.
  • 2 bring to a boil.
  • 3 cover and simmer for 15 minutes.
  • 4 transfer to a processor.
  • 5 blend well.
  • 6 return the mixture to a saucepan.
  • 7 reheat.
  • 8 add the remaining stock and cream.
  • 9 reheat.
  • 10 can be served cold with a dollop of whipped cream, chives and parsley.
